Ingredients:
Fresh okra
Olive oil
Garlic cloves
Smoked Paprika - adds a delightful smokiness and depth of flavor to the dish
Kosher Salt
Black Pepper
Cayenne - introduces a subtle heat and enhances the overall flavor profile of the dish
Yellow onion
Canned Diced Tomatoes - I prefer either fresh or diced tomatoes. Reject other tomato flavor sources like tomato sauce or paste.
Water
Red Pepper Flakes (optional)

Stewing okra instructions
Slice the okra into ¼ -½ inch slices.
Heat a medium saucepan or large skillet on low heat. Add olive oil and once heated add the garlic cloves and half the spices. Let the oil simmer 3-4 minutes to allow the infusion of the garlic and spices to occur.
Increase to medium high heat then add onions and sauté for 3-4 minutes. Add the sliced okra and cook for 2 minutes, stirring as needed.
Add the tomatoes and cook over high heat until they release their juices which should take about a minute. Add the water, cayenne, and remaining spices. Cover and simmer for 20 minutes stirring as often as needed.

Taste for seasoning. Add freshly ground black pepper, salt, and paprika if needed.

Air fried breaded okra won't taste exactly like it's been deep fried, but it's very close.
"Frying" it with the air fryer makes it healthier since you're not submerging it in a big pot of oil. Using a double coating of the breading ensures you get an evenly and fully covered fried vegetable.
Ingredients
For the breading:
All-purpose flour
Cornmeal
Seasonings: garlic powder, paprika, salt, pepper
For the batter*:
Milk of choice
Egg/Egg substitute
White vinegar

Instructions
Start by washing and slicing the okra into ½ inch pieces. Discard the top with the stem and the pointy tip at the other end. Dry with paper towels.
Step 1. Add milk and white vinegar to a bowl. Let sit for 5 minutes while chopping the okra, then add the egg/egg substitute to the milk and vinegar. Mix thoroughly. Mixing milk and vinegar will make a homemade buttermilk.
Step 2. In another bowl combine the flour, cornmeal, salt, pepper, paprika, and garlic powder. Mix well.
Step 3. Working in batches, fully coat the okra slices in the cornmeal mixture.
Step 4. Use the slotted spoon to pick up the now fully breaded okra. Gently jiggle the spoon to remove any excess breading and transfer to an oiled air fryer basket or tray. Place in one layer so the pieces are not touching. Spray generously with cooking oil until the breading is completely coated in oil.
Step 5. Air fry at 400°F (204°C) for 10 minutes. Halfway through, toss and spray again with oil so that any unoiled breading has been sprayed. The okra will be a deep golden brown when finished. Depending on your air fryer, you may need to cook it for longer, up to 15 or so minutes.

What is okra slime?

Okra slime is made up of a type of sugar—a soluble fiber, if we’re getting specific. What we call slime is actually called mucilage in the plant world, similar to the jelly of aloe or nopal. You’re more likely to see it after okra pods have been cut and exposed to moisture.

1. Provides good nutrition-Okra is rich in vitamins, minerals and disease-fighting nutrients.
2. May boost heart health-Heart disease is the No. 1 cause of death in the U.S., according to the Centers for Disease Control and Prevention (CDC). Following a heart-healthy diet and keeping cholesterol levels in check are two good ways to lower your risk.
3. May help manage blood sugar-When your body can’t properly process glucose (sugar), you may develop Type 2 diabetes.
4. Benefits GI health-Okra is full of fiber, which studies have shown can decrease the risk of colorectal cancer. That’s a big deal because colorectal cancer is the second leading cause of cancer deaths in the U.S.
5. Strengthens Bones-Okra is an excellent source of calcium, which is important for strong bones. In one-half cup of cooked okra, you get about 6% of your daily calcium.

While we might know this plant as a vegetable for culinary purposes, botanically it's a fruit, as it's the seed-bearing part of the plant. Okra grows best in hot and humid climates.

Cleaning Greens:

One of the easiest ways to begin the washing process for collard greens is to thoroughly soak the leaves in cold water for about 10 to 15 minutes. This will loosen any dirt clinging to the leaves and remove any bugs that may be hiding. After soaking your leaves, you'll give each one an additional rinse under running water to properly inspect and ensure the collard greens are actually clean. You can also include salt or vinegar in your cold water soak to further remove any impurities. A tablespoon of either will help remove bacteria from the plant. After your leaves have been soaked and rinsed, gently dry them with a paper towel. Then, before you begin cooking collard greens, cut off the tough, hard-to-eat stem at the bottom.

Green Breakfast Smoothie🥤

Ingredients
2 cups Kale Leaves (or spinach)
2 cups Pineapple (chopped)
1 Medium Banana
½ Apple (chopped)
2 tablespoons H**p Hearts (sub flax seeds or chia seeds)
2 cups Water (add more for thinner smoothie)

Directions
1. Put spinach or kale, pineapple, banana, apple, h**p hearts, and 1 cup of the water into a high-powered blender.
2. Blend for 1 minute until very smooth. If you'd like a thinner smoothie, add more water.
3. Pour your breakfast smoothie into a glass and enjoy!

ALL-DRESSED KALE CHIPS
Vegan, gluten-free, grain-free, nut-free, refined sugar-free, soy-free

Yield
1-2 servings Prep time
15 minutes Cook time
25 minutes
Crispy and chewy kale chips baked in the oven and seasoned to perfection. Enjoy these as a healthy alternative to potato chips.

INGREDIENTS
PER BAKING SHEET:
approx. 1/2 bunch kale leaves
1/2 tablespoon extra-virgin olive oil or melted coconut oil
1.5 tablespoons nutritional yeast
1 teaspoon garlic powder
3/4 teaspoon chili powder
1/2 teaspoon onion powder
1/2 teaspoon smoked paprika
1/4 teaspoon fine grain sea salt or pink Himalayan Sea Salt
1/8 teaspoon cayenne pepper (optional)

DIRECTIONS
Preheat oven to 300F. Line a large rimmed baking sheet with parchment paper.
Remove leaves from the stems of the kale and roughly tear it up into large pieces. Compost the stems (or freeze for smoothies). Wash and spin the leaves until thoroughly dry.
Add kale leaves into a large bowl. Massage in the oil until all the nooks and crannies are coated in oil. Now sprinkle on the spices/seasonings and toss to combine.
Spread out the kale onto the prepared baking sheet into a single layer, being sure not to overcrowd the kale.
Bake for 10 minutes, rotate the pan, and bake for another 12-15 minutes more until the kale begins to firm up. The kale will look shrunken, but this is normal. I bake for 25 mins. total in my oven.
Cool the kale on the sheet for 3 minutes before digging in! This really makes all the difference! Enjoy immediately as they lose their crispiness with time.
Repeat this process for the other half of the bunch.

TIP:
Feel free to make these in a dehydrator if you have one. You can also experiment with the convection or dehydrator setting on your oven (if applicable).

3. Leafy greens are good for your eyesight-Leafy greens are rich in carotenoids, just like carrots.

How do you select a ripe watermelon?? Here are some tips:

Tip #1: Find the Field Spot-this is the biggest indicator of a good watermelon.
The field spot, or ground spot, is a creamy spot on the outside, and it’s where the watermelon was resting on the ground, or the underside of the watermelon.

Tip #2: Pick a Dull Looking Exterior-A shiny exterior appearance indicates an underripe watermelon, though this can be a bit tricky if they’ve added wax, and then you can’t really tell.

Tip #3: Knock on It with Your Knuckles-Rather than a dull thud, you are looking for a hollow sound, a deep sound.

Tip #4: Get the Heaviest One for Its Size-That means there’s more water in it, which means a juicy watermelon.

Tip #5: Check for a Uniform Shape-irregular bumps indicates the melon may have gotten inconsistent amounts of sun or water, and you should avoid that one.

Tip #6: Look for the Sugar Spots and Pollination Points-The photo above shows a watermelon with sugar spots, they appear to be dirt or soil however, the spots will not rub off.

Ingredients
1/4 cup rice vinegar or white wine vinegar
1 tablespoon grated lime zest
2 tablespoons lime juice
2 tablespoons canola oil
4 teaspoons minced fresh gingerroot
2 garlic cloves, minced
1/2 teaspoon salt
1/4 teaspoon sugar
1/4 teaspoon pepper
salad:
4 cups fresh baby spinach or arugula
3 cups cubed watermelon
2 cups cubed cantaloupe
2 cups cubed English cucumber
1/2 cup chopped fresh cilantro
2 green onions, chopped

Directions
In a small bowl, whisk the first nine ingredients. In a large bowl, combine salad ingredients. Drizzle with dressing and toss to coat; serve immediately.
