Such a yummy arepa recipe from Isabel at TastyAZ, try it for yourself and tell us how it goes. Ingredients: 1 cup pre-cooked cornmeal 1 cup grated mozzarella cheese 1 cup warm water 1 tsp salt 1 tbsp softened butter 1 tbsp vegetable oil for cooking Directions: 1. In bowl, mix cornmeal, salt, water and butter, then knead the mix until smooth ball forms. 2. Cover with a towel and let it rest for 10 minutes. 3. Form clementine size balls and flatten with a plate of tortilla press, about 6 discs about 5 inches in diameter. 4. Add mozzarella cheese to the center of one of your discs and cover with an additional corn disc. 5. Seal edges by pressing them down and inward. Make sure it's completely closed. 6. Add oil to cast iron skillet and heat over med-high heat. Then add the arepa to the pan or skillet. Cook for about 3-4 minutes per side. 7. Swiss Chard Rolls #Recipe Yield: 4-6; Prep: 45min ; Cook: 1 hr 45min Ingredients: 2 3/4 cups vegetable broth/stock Two 1/4-inch-thick slices fresh ginger, each 1-inch diameter 1/2 cup short/long-grain brown rice 1/2 cup wild rice 4 tbsp avocado oil (divided) 1 cup sliced green onions 3 carrots, peeled & chopped into ¼” 1 med onion, finely chopped 1 clove garlic, minced 1/2-inch piece fresh ginger, peeled & grated 2 tsp mild curry powder 1 tsp ground cumin 1/2 tsp kosher salt 1/4 tsp ground black pepper 1/2 cup golden raisins 3 shallots thin slices 6 oz ground chicken 1/2 cup coconut milk 12 large fresh Swiss chard leaves (2-3 bunches) 1 26-oz jar arrabbiata/tomato-basil sauce Directions: 1. Rice: Mix veg. broth & ginger slices in med saucepan to boil. Add brown & wild rice to boil. Reduce heat to med-low; cover & simmer till rice just tender, 50-55mins. Drain if needed. Discard ginger slices. Set aside. 2. Position oven rack in center of oven & preheat 400F. Lightly oil 13 by 9 by 2 in glass or ceramic baking dish with 1 tbsp avocado oil; set aside. 3. Heat 2 tbsp oil in large nonstick skillet over med-high heat. Add green onions, carrots, onions, garlic, ginger, curry powder, cumin, 1/4 tsp salt,1/8 tsp pepper. Cook till tender, 6-7min. Stir golden raisins & cooked rice in. Add coconut milk, bring to simmer. Cook 1min. Season with 1/4tsp salt & 1/8tsp pepper. 4. In frying pan heat tbsp oil over med-high heat. Add shallots & cook, 2-3min. Add ground chicken. Stir & break up to small pieces. Once cooked add other vegetable mix. Remove from heat & let cool. 5. Bring large pot salted water to boil. Use sharp knife- cut thick stems from center of each leaf; discard stem. Cut each leaf 1/2 lengthwise. Trim wide ends from leaves so each leaf half is10in long. Use tong & dip each leaf half into boiling salted water for 10sec. Transfer to paper towel. 6. Place 1/3 cup of rice filling onto end of 1 swisschard leaf half. Roll up leaf, enclosin
