Quesabirria Tacos Recipe - Don't Lose This 😋😋

Ingredients:
2 lbs beef chuck roast or brisket, cut into 1-inch cubes
1 white onion, roughly chopped
5 garlic cloves
2 bay leaves
1 tbsp cumin
1 tbsp oregano
1 tbsp chili powder
1 cinnamon stick
Salt and pepper to taste
Beef broth or water
Corn or flour tortillas

Instructions:
Season the beef cubes with salt, pepper, cumin, oregano, chili powder, garlic, onion and bay leaves. Add just enough beef broth or water to cover the meat.
Bring to a boil then reduce heat and simmer for 2-3 hours until beef is very tender.
Remove meat from liquid and shred with two forks. Reserve liquid.
Dip tortillas in the hot beef liquid to soften. Fill with shredded beef and any other desired taco toppings.
Optionally, dip assembled tacos in the beef liquid before serving for extra flavor.

Cornbread Taco Bake

Ingredients:

1 lb ground beef
1 package taco seasoning
2/3 cup water
1 can (14.5 oz) diced tomatoes, drained
1 can (15 oz) black beans, rinsed and drained
1 package (8.5 oz) cornbread/muffin mix
1 cup shredded cheddar cheese
1/2 cup milk
1 egg
Chopped fresh cilantro for garnish
Sliced jalapeños for garnish
Directions:

Preheat your oven to 400°F (200°C).
In a large skillet, cook ground beef over medium-high heat until browned. Drain the excess fat.
Stir in taco seasoning, water, tomatoes, and black beans. Simmer for 5 minutes until thickened.
In a mixing bowl, combine cornbread mix, milk, and egg. Stir until smooth.
Pour the meat mixture into a greased 9x13 inch baking dish. Spread the cornbread batter over the meat mixture.
Bake in the preheated oven for 20 minutes. Sprinkle shredded cheese on top and bake for an additional 5 minutes or until the cheese is melted and the cornbread is cooked through.
Garnish with cilantro and jalapeños before serving.

I made fry bread last night and this is my tried and true recipe.
3 cups flour
1 1/2 tablespoons baking powder
1 teaspoon salt
2 tablespoons melted butter and
1 1/4 cup of milk. Mix all ingredients and let rest 15-20 minutes. Roll dough into balls then flatten out balls on floured surface. Fry on each side in hot oil for 2-3 minutes each side. These are so good.

Great way to get through the rest of the week, some Special nachos 😍
