Kobe-gyu from Usunaga Farm. Fed Whiskey mash from Yamazaki Distillery. Animals diet combines 50% fermented feed with 30% rice based and 20% grain feed. Usunaga San at 28 years old is one of the youngest Wagyu Farmers in Japan. With extremely rare market availability, this beef is one of the most prized programs offered.

What a week for Consumers Packing! We attended The One Group’s conference right here in Chicago for the last 3 days where we were awarded partner of the year for STK & Kona Grill. We’re honored to be supplying great restaurant groups with our hand cut Prime beef from coast to coast!

Last night we had the honor of presenting multiple Wagyu regions at Wagyu Truffle Dinner. We started with domestic Wagyu tenderloin from from Georgia, then moved on to Beeman Ranch Wagyu beef cheeks, then a variety of rare A5 Japanese cuts for the last two courses. The stand out cut of the night was Matsusaka Strip which is luxury imported item from Japan. What an amazing event put on by the Maple & Ash Team!

What an amazing weekend here in Chicago thanks to ! We had so much fun being a part of it and are already counting down the days until next Summer!
