From the farm to the kitchen! A week ago I stopped in at urban farm in Washington Bottoms (the former land of nothingness behind Viet Hoa & the Kroger gas station) to see what was growing. They’ve done a killer job of keeping things going through that snow/freeze we got and am excited to see these cabbages & kale walk into the kitchen today. One of the ways we manage to use seasonal produce is by using a different brassica or green in our mushroom melt throughout the year. Cabbage is a favorite, all brassicas really. In this way we have a consistent menu item that can flex with what’s in season. It’s a win for all of us!

Made these muffuletta inspired bialy! Got a late harvest of green figs that we brined & turned into a tapenade, that’s in the middle. Then it’s topped with smoked carrots, cashew cheese & sesame seed! Inspired by ’s muffuletta rolls!
Bread for bread & soup pickup tomorrow is this big ol’ tordu (it means “twisted”)! It’s got a hint of orange oil, dried whole sage, and some blue corn masa. We’ll have FOUR extra of these if you feel so inclined to grab one.

We’re gonna remain closed today! We’ve got some prep to knock out and can’t imagine too many folks are out and about yet. Lord willin & the creek don’t freeze we’ll be open tomorrow in some capacity✌️
🥖 🥪 🍠 We got a lil torta special today! Beet chorizo, sweet potato hash, tofu egg, cashew chz, cayenne sauce & mayo on a house made sourdough bolillo that’s got a lil blue corn masa in the dough! It slaps. $13 plus tax! Get warmed before the freeze. We’ve also got a Korean inspired soft tofu & sweet potato stew (think soondubu jjigae) to get you through.
🍄 Wanna get a lil freaky with that brekky sando today and probably today only? Ask for this koji cured maitake! Wild maitake brined in leftover & broth, smoked, then koji grown on it & cured for a couple weeks. Take a walk on the wild side!! Flavor notes of cured meat/cheese, coffee, deep mushroom umami, and bacon!

We’ve found it very nice to load the biscotti into the oven at the end of the day, turn it off, and allow it to slowly dry overnight. We’ve found it’s not so nice to forget you’ve done that & come in before the sun & turn the oven on.

Winter holiday preorders hit the web store yesterday! If you’d like to order something you can do that online or in person before Dec 18th. Pickup will be Dec 22 during regular biz hours (we’re closed 23-27!!)
We got a lil 3 bean chili left then it’s on to this banger: creamy chipotle potato soup with slightly smoked shredded butternut & crunchy tortilla strips made with blue corn masa. You can get light plant-based fare in Memphis but stick to your ribs, help you run 100 miles or sustain you through childbirth (real reports my friends!) homemade food with a focus on local/natural/organic ingredients?
