HEY GUYS. Sharing my MAC N Cheese recipe (NO bread crumbs).
Thanksgiving sides are just as important! Made this one last year and it was a big hit!

Smokin' Cajun Mac 'n' Cheese Delight

Ingredients:

1 lb elbow macaroni
2 cups heavy cream
1 tsp Cajun spice
2 tsp garlic powder
2 tsp smoked paprika
1 cup Colby Jack cheese, shredded
1 cup sharp cheddar cheese, shredded
1 cup smoked Gouda cheese, shredded
Salt (for boiling water)
Additional cheese for topping

Instructions:

Boil the Noodles:

Bring a large pot of water to a rolling boil.
Add a generous amount of salt to the boiling water.
Cook the elbow macaroni according to the package instructions until al dente.
Drain the noodles and set them aside.
Prepare the Cheese Sauce:

In a separate pot, combine 2 cups of heavy cream, 1 tsp of Cajun spice, 2 tsp of garlic powder, and 2 tsp of smoked paprika.
Cook over medium heat, stirring frequently, until the mixture is hot but not boiling.
Gradually add in the shredded Colby Jack, sharp cheddar, and smoked Gouda cheeses.
Continue to stir until the cheeses are melted, and the sauce is smooth and creamy.

Assemble and Bake:
Preheat your oven to 375°F (190°C).
In a large baking dish, combine the cooked macaroni and the cheese sauce, ensuring the noodles are evenly coated.
Sprinkle an additional layer of your favorite cheese on top for that irresistible golden-brown crust.
Bake in the preheated oven until the top is golden and the edges are bubbling, typically around 25-30 minutes.
Serve and Enjoy:

Allow the baked mac 'n' cheese to cool for a few minutes before serving.
Scoop out generous servings, savoring the creamy texture and the hint of Cajun spice.

I think today is a great opportunity to think about who we have become this year and really consider how we can be better. What sometimes is easily overlooked, is how much things can improve if we all gain some compassion for others. Its fine to not agree with one another, but we can all find common ground in some humility. At the end of the day, we are all just people who have different views, beliefs, and struggles. It only takes one act of kindness to change the course of someone’s day.
