A very simple creamy sauce recipe:

• 3 tbsp. sunflower seed butter
• 150-200 ml of water (depends on what density you want)
• ground pepper
• dill (fresh or dried)
• salt
• ginger (optional)

Beat all ingredients with a blender.

Creamy and delicate taste, easily replaces mayonnaise and other dairy sauces. In the same sauce, you can bake or add to stewed vegetables 5 minutes before cooking.

Such a sauce can also be prepared from minimal ingredients: butter, water, salt.

Pistachio cookies

Ingredients:
✅Rice flour - 6 tbsp.
✅Date - 2 pcs.
✅ Almond butter - 2 tbsp.
✅Almond milk - 1 tbsp.
✅ Pistachios for sprinkling.

Preparation:
1⃣ Grind whole grain rice in a coffee grinder to a flour condition. (or use a blender and a special attachment for making flour). For 6 tbsp. flour you need to take 6 tablespoons. rice.
2⃣ Remove the stone from the date and mash with a fork. The date should be soft.
3⃣ In a deep bowl combine: rice flour, date puree,almond butter, the dough will look like a crumb. Next, add almond milk (or water) and mold the dough into a small ball, then form a "sausage" and cut it into 6 pieces. Sprinkle each cookie with chopped pistachios (or any other nuts).
4⃣ Bake in an oven preheated to 180C for 8-10 minutes.

GLUTEN-FREE LEMON TART
Place ❤❤❤ if you like healthy desserts!
⏰ 30-40 minutes (excluding baking)

✅Ingredients:

📌For sand base with a diameter of 18 cm:
▪75 gr ground almonds;
▪75 g gluten-free flour mixture (or 50 g rice flour + 25 g corn starch);
▪30 grams of coconut butter;
▪25 gr Jerusalem artichoke syrup;

📌For Lemon Kurd:
▪300 ml of coconut milk;
▪30 grams of corn starch;
▪40 ml Jerusalem artichoke syrup;
▪100 ml lemon juice;
▪ Zest of 1 lemon;
▪20 grams of coconut butter(optional);
▪1 tsp turmeric;
▪ Vanilla to taste.

👩‍🍳 How to cook?
1⃣ Prepare the dough. Melt the coconut oil. Grind the nuts with a blender until crumbly. Mix all the ingredients for the dough into a homogeneous mass. Distribute evenly over the shape. Chop the bottom of the cake with a fork - this way the dough will not puff up.
2⃣ Bake the cake at 180C in a well-heated oven for 10-15 minutes. The cake should turn golden.
3⃣ Remove the finished cake and leave to cool in the mold. After the cake has cooled down, you can put it in the refrigerator for 1 hour until it cools completely.
4⃣ Cooking Kurd. To do this, you need to remove the zest from the lemon, squeeze the lemon juice and remove all the seeds.
5⃣ Pour the coconut milk into a small saucepan, add the starch and stir well with a whisk to completely dissolve the starch. Add syrup, lemon juice, turmeric, zest, put on medium heat and stir constantly, cook until thick.
6⃣ Pour the filling over the cooled crust and decorate to taste.
7⃣ Put in the refrigerator for 3-4 hours to stabilize the filling. Serve chilled.

Ingredients

1 large frozen ripe banana
1-2 tablespoons cacao powder (or use unsweetened cocoa powder)
2 tablespoons creamy natural peanut butter
1 teaspoon vanilla extract
½ cup unsweetened almond milk (or milk of choice), plus more to thin as necessary

Instructions

In a large high-powered blender, add in all ingredients and blend on high for 1-2 minutes or until all ingredients are well combined. Start with 1 tablespoon of cacao powder, but feel free to add another if you like it extra chocolatey. If necessary, add in more almond milk to thin the smoothie. Makes 1 smoothie. Feel free to double the recipe to serve 2.

Almond, Date and Peanut Butter Candy

Ingredients:

100 g almonds
80 g dates (soak in hot water for several hours)
80 g peanut butter
cocoa for decorating sweets

Preparation:

1. Drain water from dates, peel and grind into a thick paste.
2. Grind the almonds. Mix almonds with dates, add peanut butter.
3. Mix everything to a thick mass (if the dates were dry, add more paste). Blind candies weighing 20 g.
4. Dip each in cocoa and leave in the refrigerator for a couple of hours to freeze.

Chocolate Banana Cheesecake

Ingredients (for a mold with a diameter of 11 cm):
For the basics:
50 g sesame seeds
10 g coconut sugar
20 g coconut oil
For the cheesecake:
120 g banana puree (chop 1 banana with a blender or mash with a fork)
150 g cream cheese
170 g soft cottage cheese
1 egg
20 g carob or 10 g good cocoa powder
For the berry layer:
100 g raspberry puree (ready-made or homemade)
50 g water
20 g coconut sugar
2 g (1/4 tsp) pectin

Preparation:

1. Make the base. Fry the sesame seeds slightly in a dry frying pan. Melt coconut oil and mix with sugar. Mix this mass with sesame seeds, do not pour everything out at once, you may need less oil.
2. Tamp a split baking dish with this mixture (it will stick, so you don't need to be too zealous) and put it in the freezer for 20-30 minutes.
3. Make a cheesecake. Place all cheesecake ingredients in a blender and blend until smooth.
4. Collect the cheesecake. Remove the cheesecake base from the freezer and wrap in foil. Pour the cheesecake into it.
5. Place the dish with the cheesecake in a sturdy bowl of hot water and bake in the oven at 160 ℃ for about 1–1.5 hours. The middle of the cheesecake should shake.
6. Cool the cheesecake for 30-40 minutes in the turned off oven, then put it in the refrigerator overnight.
7. Prepare the berry layer. Mix sugar with pectin. Heat raspberry puree with water to 40 degrees, add pectin and bring to a boil. Boil for 2 minutes.
8. Cool the mixture until thick and pour over the cheesecake. Garnish with fresh raspberries if desired.

7-INGREDIENT PISTACHIO LOAF by ❤️

Serves: 8
Ingredients:
2 cups of self-raising flour
1/2 cup sugar
1 scoop (40g) vegan vanilla protein powder

Wet:
1,25 cups almond milk
1/4 cup coconut oil
3/4 cup pistachio butter
1 cup spinach

Method:
1. Line a loaf tin with non-stick paper. Preheat the oven to 160 degrees Celsius, fan-forced
2. Dry mixture: in a large bowl, combine the dry ingredients
3. Wet mixture: blend together all the wet ingredients until smooth
4. Pour in the wet mixture into the dry and fold gently until combined
5. Transfer the butter into the prepared tin
6. Bake in the oven for 35-40 mins until a knife inserted comes out clean
7. Allow the loaf to fully cool before glazing (lemon glaze using: 1 Tablespoon lemon juice + 1/4 cup icing sugar + pistachios for decoration

CHOCOLATE ICE CREAM
Ingredients:
- 2-3 ripe bananas (you can freeze bananas in advance, this will shorten the total freezing time)
- 1 tbsp. spoon of cocoa powder
- 500 ml of plant milk (rice, oatmeal, or cooked independently from a mixture of almond butter and water)
- 1-2 tbsp. spoons of cocoa beans butter with hazelnut butter (can be replaced with a different taste)

Preparation:

Chop the bananas into medium pieces and put in a blender, add milk, cocoa and urbech.

Stir, put in a mold and place in the freezer for 2 hours.

BUTTERSCOTCH BANANA BLONDIES

SERVES 12 SQUARES

INGREDIENTS:
2 very ripe large bananas 1/2 cup creamy almond butter 1 tbsp vanilla extract 3/4 cup almond flour 1/4 cup coconut flour 3/4 cup butterscotch chips 1 tsp cinnamon 1 tsp baking soda pinch sea salt

INSTRUCTIONS
Preheat oven to 350.
Line an 8x8 baking dish with parchment paper (spray coconut oil in the dish first so that the parchment paper sticks).
In a blender or food processor, add the bananas, almond butter, and vanilla extract. Pulse until mostly smooth.
Pour into a bowl, and stir in the almond flour, coconut flour, cinnamon, and salt. Once combined, fold in the butterscotch chips, reserving a few to sprinkle on top.
Pour batter into the baking dish and smooth out with a spatula. Sprinkle remaining butterscotch chips on top. Bake for 20-22 minutes.

Gluten Free SunButter & Banana Pancakes

Start to Finish: 15 min
Servings: 12 Pancakes

Ingredients
2 ripe bananas, peeled
1/2 cup Sunflower seed butter
2 large eggs
1 teaspoon baking powder
Grapeseed or vegetable oil, for cooking

Preheat the oven to 200°F.

Mash bananas in a large mixing bowl. Add the SunButter, eggs, and baking powder. Mix well. Heat a skillet or griddle over medium-low heat until a drop of water sprinkled on the pan sizzles immediately. Brush the pan with oil and let heat for a few seconds.

Ladle 1/4 cup of pancake batter onto the pan for each pancake. Cook until the bottoms are golden brown and the edges appear dry, about 5 minutes. Gently flip and cook for another minute or until the bottoms are browned and the pancakes feel firm to the touch. Keep the cooked pancakes warm in the oven while preparing the rest.

Serve warm.
