Last Friday, I decided to treat myself. My favorite person was busy, and my daughter was out of town. I could have chosen to stay in, go to bed early, and feel down—blah. Instead, I decided to follow a hunch.
I went to one of my favorite places, , and indulged in everything I was yearning for: slowing down, enjoying yummy vegan food, reading a book, and sipping a drink without rush. However, I also received the news that my favorite escape is closing down this Sunday.
People, go out, get out of your way, enjoy yourself, and support small businesses! It makes a difference to show up, fully you, expressing your admiration and appreciation for someone else.

The more doctors and health experts I consult, the clearer the answer becomes. Even my 102-year-old abuelita’s common sense aligns with the intellect of the experts: It all comes down to our food choices. Those were her words.
Our technology advances, and that’s wonderful. My grandma’s father died of what we can now identify as colitis. He bled out, and in his humble town in Colombia, they didn’t have the tools for a blood transfusion.
My daughter nearly fainted on me the day we went to the hospital. But thanks to our advances in technology, she’s back in school today with a clear diagnosis.
There’s no villain in this story. The medical field has saved countless lives in emergencies and urgent cases. But these advances don’t mean our bodies have evolved at the same pace, nor should we forget our bodies’ basic nature.
We are still made of flesh and bone, digest food, have pounding hearts, and depend on oxygen to live. Our bodies work like intricate machines, with an incomprehensible intelligence that does everything to keep us alive. Our bodies are our friends.
Our responsibility, as the conscious aspect of the body, is to feed it what it needs to thrive. We MUST remove the inflammatory foods we cannot digest. Food isn’t the enemy, but not everything served at a restaurant can be called food. The power lies in our choices.
Processed meat, white processed refined foods, highly sugary products, dairy, and cheap gluten tax our bodies creating inflammation. Inflammation causes disease.
The answers I’ve gathered point towards a plant-based lifestyle, where, along with medical advances, tangible results, and tests, we can measure our improvement.
I can’t tell my daughter to go vegan—there’s too much emotional charge in those words (more on that later)—but I can invite her to make better choices next time. And after that, I will invite her again and again, one meal at a time.

Meet Our Harmony Bars 🌟
These are our go-to snacks for a boost of energy and fiber. Made with organic nuts, dates, and rich maple syrup, they’re as nourishing as they are delicious.
The process is delicate and extensive. First, we create a base with dates and oats. Then, we roast the nuts in maple syrup and cinnamon. Then we place them carefully on to our base. Finally, we dehydrate the bars to achieve the perfect crunch.

Do you know what a lobotomy is? It’s a procedure used back in the ‘50s to stop mental illnesses. It involved a surgeon inserting a pointy instrument beneath the eyelid and, with a cold push, puncturing a part of the skull to create a separation between some neural connections. Nowadays, this procedure is illegal. But there was a time when this was acceptable, as long as the doctor ordered it.
What is our modern-day lobotomy? We can’t know for certain. But what we do know is that now, we can take a step back from what the doctor orders, do some research, get other opinions, and finally decide for ourselves what we feel is the best route—what makes sense for us, and which path we are willing to take. For me, healing is an exploration of our lives at large: the emotional aspect, nutrition, mindset, and the information our body expresses through symptoms, which can be measured and quantified.
The doctor is a human being just like you and me. He doesn’t hold the ticket to our healing; he has information, a point of view, and resources. But ultimately, the one who should decide on your treatment, whichever that is, is you.
Our modern-day lobotomy might very well be giving our trust away to only one side of the story, thinking that there are no other choices, and outweighing the side effects of a treatment for an instant solution.
There was a time when I didn’t question what the doctor prescribed. Thank goodness I’m not that naive anymore. I won’t blindly accept the doctor’s recommendation to have my daughter on a biological drug for the rest of her life.
And, thank goodness, we are not alone on this journey!

The body’s natural response for protection is to create inflammation around areas that are weak or not well. With an autoimmune condition, the body constantly reacts with inflammation in a specific area, even without a clear trigger.
I don’t see this diagnosis as a sickness but as a characteristic of the body. When out of balance or overly stressed, our bodies show this misalignment through physical symptoms. My daughter’s body expresses this stress through her colon. It’s part of her individuality and sensitivity.
Our job is to listen to her body and remove the stressors causing inflammation. One way to start this is by examining our food choices.
This journey is about helping her become aware of her relationship with her body. It’s about understanding that her choices—what she eats, thinks, and feels—affect her health.
For me as a mom, this means guiding with kindness and patience. I aim to avoid forcing restrictions or creating food battles. Instead, I’m helping her see that not all food is created equal and that food quality has consequences.
We’re negotiating meals, comparing ingredient labels, giving her the right to choose, and fostering curiosity about food.

Mommy, I’m so hungry for healthy foods. Before I didn’t believe you I should eat like that because you are so you, but now I understand, and I don’t even want to eat more bad food.

We’ve been in the hospital for three days and have been searching for answers for the last two weeks since Vio started having blood in her stool.
Today, after many tests and procedures, the doctor confirmed that she has Ulcerative Colitis (UC). UC is an autoimmune condition where her colon inflames as a defense mechanism, even without external triggers. This inflammation causes tummy aches, chronic diarrhea, and blood in her stool. Due to blood loss, she is also anemic right now.
Although she’s young, the path to healing is in her hands. We are starting with simple steps at home: changing what no longer serves us, and understanding the uniqueness of our bodies. Next: finding partners we trust, gathering information, and making a plan. My role: stand by her side, bring her tools, and trust her.
If I ask why this is happening to her, this is my answer: This is her journey—an opportunity for empowerment. She will get to know herself better, which is how she grows intro a strong, conscious, beautiful woman.
