"My inspiration for this cocktail is the AMARA bar team. Over the seasons, they have warmed my heart to the idea of highball cocktails, so I wanted to make my own take on one. I have never made my own liqueur before, so I wanted to challenge myself and create a cocktail that represents myself and my team in a glass. It’s simple but unique – botanicals in gin are balanced by the blueberry vanilla liqueur, and the tanginess and sweetness of the lime syrup mix with the sparkling Topo Chico to create a refreshing, balanced, spritzy, fruity, crushable take on a highball-style cocktail. The name is a play on one of rock 'n' roll’s greatest songs, The Midnight Special by Leadbelly."
