Happy Advent! This is the best time of year for Scandinavian treats. The almond tea ring is a classic for Christmas! Made with a delicious filling of homemade almond paste, cream cheese, cinnamon sugar, slivered almonds and optional raisins. And of course Pepperkakor is the fancy sister of gingerbread! Cardamom rolls, and of course Chocolate Cardamom Cake. Order sooner than later especially the week of Christmas!
So it’s been a busy Fall going back to teaching part time but this busy baker is selling the good stuff at the Mount Olivet Lutheran Church Holiday Boutique this Saturday, November 5th, from 9am-2pm. I’ll have Chocolate CardaMom Cakes in different sizes (including new tea cake and mini Bundt), Pepperkakor cookies (free kids cookie too!), my new Swedish Rum Punsch filled chocolates, and of course, CardaMom Buns! Hey baking enthusiasts! Sorry for the radio silence but summer brought an amazing 2.5 week trip with family to Ireland followed by a less than great two weeks of recovery for the and but it was totally worth it! It’s been a busy couple days of baking including a fun custom chocolate CardaMom cake for a 2 year old’s birthday! I love making birthday cakes (post coming soon). I’m going to be busy again until mid august but I’ll be ready for more orders then!

It’s here! For those that know me chocolate is my vice. And this baby is my newest creation and a great 4th addition to the CardaMom menu: Gluten Free Chocolate Cardamom Cake. Yep! Gluten free folks! Soft, brownie like texture with a choice of toppings- chocolate ganache, simple glaze, mini chips, sprinkles, powdered sugar- we can customize for your needs. $25 for a standard sized Bundt.
Gonna be a yummy Mother’s Day for these folks! The house smelled extra almondy amazing today.

Hello Scandinavian treats enthusiasts! I’ve been wanting to share my inspiration and back story for Cardamom for awhile and after a few crazy months here it is- finally! My grandmother’s family emigrated from Sweden in 1925. She connected with her cousin later on and since then we’ve had three generations of cousin connections. Our Swedish family is generous and about the most fun folks in the world. Grandma/cousin Kristina served us many formal coffee fikas and inspired me to learn how to make Swedish bakes.
I’ve got a few Mother’s Day orders in already but could squeeze in a few more. Also start thinking ahead to graduation parties or other spring gatherings that could use a special treat!
Hello my Scandinavian treat loving friends! I’m back. It was a really rough but important and historic few weeks with the Minneapolis teacher and ESP strike. One good outcome was a finalized recipe for my almond coffee cake. Made with cardamom dough (duh!), filled with HOMEMADE almond paste, cream cheese, cinnamon brown sugar, almonds, and optional raisins. You top it with included almond icing when ready to serve. Two size options that can act as a share and tear, or cut slices like a pie to reveal the fun swirls.
Small- serves 6-12. $20
Large- serves 12-24 $40
Hi friends! Apologies for being MIA. Things changed dramatically for our family as the Minneapolis teachers and ESP’s went on strike last week. My husband and I are both public school educators in the city and this fight is long overdue. My baking energy has gone into lots of treats for the striking staff. Hey friends! 240 CardaMom rolls and 200+ Pepperkaker heart cookies in the past few weeks have kept me busy! It’s also given me a better idea of output and actual total cost to create (bags, labels, parchment paper, even the higher gas bill 😂 and business insurance!) With feedback from my first few customers and asking for a bit of grace as this newbie to business figures things out, starting March 1st I’ll be upping the price a bit per dozen rolls to $20/dozen but I’ll give you a deal on $38/2 Dozen! All of course with that heavenly cardamom butter. You’ve got a little time still for the smaller price! Loving baking these as well as exploring new recipes to add to the menu the next few months.
Are you familiar with the Swedish stories of old man Pettson and his cat Findus? One of favorite family bakes is the pancake cake from this story. Even better when it’s breakfast for dinner!
I’ve been busy getting buns and cookies out to a number of my first customers and I’m feeling great about this so far! Still lots to learn but loving how it’s making the house smell of warm baked goods almost daily!

Ok non baking related post but it’s still related to my baking and customers! I’m SO very touched by this gift of a 100% authentically made Sami bracelet (complete with antler button and gut sewing string). It’s delicate, totally my colors, and of course a favorite, Scandinavian. Im not sure my rolls deserve such a beautiful gift but I wear it proudly. I’m so glad you like them! Pepperkaker cookies! The spiced sister of the gingersnap. Thin, crispy, and melt in your mouth delicious. Loved by kids and adults alike! Depending on size of cookie cutter, one batch will get you 30-40 medium sized cookies (see photo).
Plain- $12 one batch.
Almond Icing- $15

CardaMom Rolls! Get a dozen for $15 or a 2 dozen for $30. These freeze great so you can thaw a whole batch in a couple hours or warm one or two up at a time in the microwave. Yum! All orders come with a side of cardamom sugar butter.
