Augustus Jackson, known as the modern-day “Father of Ice Cream”, (1808 – 1852) was born in Philadelphia. In 1817 - at just 9 years old - he began working as a chef at the White House cooking for Presidents James Monroe, John Quincy Adams and Andrew Jackson. While there, he became an expert in making ice cream – a treat that was, at the time, only affordable to the wealthy. After 20 years in Washington DC, he returned to Philadelphia to open his own successful confectionary and catering business. He began experimenting with ice cream recipes and discovered that using salt to keep temperatures low not only allowed it to freeze quicker and travel easier, it made the ice cream taste better! He was also able to make the creamy treat without using eggs – now called “Philadelphia Style” – reducing the cost of production and making ice cream available to more people. Augustus Jackson became one of the most successful business owners in Philadelphia – and perfected techniques still used in ice cream today!
