This is a delicious and blood orange cake It's a semi-homemade cake. I used a seasonal cake mix from TJs. It assembles in 20 minutes and bakes in 50 minutes. I substituted olive oil for butter in the cake mix and for the frosting. The frosting is a healthier version with cream cheese and greek yogurt. It was reducing the amount of animal fat in this recipes and making them lower in calories. Flavor in bumped up by using fresh blood orange juice in the recipe. Bess Ilano-Tenorio

This is a scrumptious low-carb salad. It has a garlic-lemon dressing that is so easy to make. It's so good you’ll eat the salad straight from the bowl. The base is roasted zucchini ( that I cooked in the oven ), diced red onion, red bell peppers, cooked faro or quinoa, lots of feta cheese, pistachios, and finely minced mint.
I made the dressing at the bottom of the salad bowl. Added all the veggies on top of the dressing. Then mixed the whole salad. This pro trick makes sure the whole salad is covered with the dressing. A bright & beautiful Winter Citrus salad for our afternoon lunch. Using 3 kinds citrus : Blood orange, Cara Cara or strawberry oranges and Naval oranges. And sliced avocados as the last citrus. I used a simple dressing of Cirolini Meyer Lemon Extra Virgin Olive Oil and Fig balsamic vinegar. It has layers of flavor with the variety of citrus. Plus creamy texture with the avocado.

A friend gave me a bag of from his tree. Who doesn’t love free avocados. So I made this smashed avocado toast with a fried egg and nice pour of on top. I still get excited about when I taste fresh pressed Olio . I love it with a passion. Mixing cold pressed olive oil with fresh herbs and a good bread are pure joy to me. It’s simple but so delicious because the olive oil is delicious.

Burrata cheese with lemon and basil olive oil. This cheese is so amazingly good and drizzled with Cirolini ,lemon & basil make it an out of this world . This recipe makes it herbaceous & lemony that makes a perfect balance of fresh flavors and creamy rich cheese. It takes 15 minutes to prep. It starts with an infused olive oil in a bowl with fresh lemon juice, minced basil, pepper flakes and sea salt. Stir everything together and set aside. Remove the from its water and place on a rimmed plate or bowl. Gently cut open the barrata to expose the fresh creamy cheese inside. Slowly pour the infused oil all over the barrata . Let the flavors seep in. Serve with toasted crostini and or fresh fruit like figs and peaches.

Figs and Prosciutto on mozzarella and toasted bread with a Cirolini balsamic vinegar drizzle . They are so easy to make but hit every tastebud on your tongue. They are amazing and delicious . You could easily use goat cheese or ricotta cheese for nice tartness . Also leave off the prosciutto to make them vegetarian. But Cirolini balsamic Vinegar is a subtle sweet and tartness that ties all the flavors together. I could have used fig balsamic vinegar which would have delicious over the figs. A great late summer treat is gazpacho. It's a Spanish cold soup. A super easy soup to make and takes under 20 minutes to prepare. Here's a quick recipe : 2 lbs ripe tomatoes, 1 peeled cucumber, 1/4 red onion, 1 clove garlic, Lemon juice, 1/4 cup olive oil , salt and pepper and pepper flakes. Our olives are sourced from northern California. Olives were brought to this area in the 1700s. But the heart of our story is my great grandmother Rosina Cirolini who immigrated to the America with her brother Gilio. They brought with them the Italian tastes and traditions. Specially, they came from the region of Trentino near the border Switzerland and Austria. I have learned the delicious taste that extra virgin olive oil brings to food. It enhances the food. Rustic bread becomes so rich drizzled in extra virgin olive oil. A little on pasta transforms it from the ordinary to the extra ordinary. Cirolini blends the olive oils that gives the oil a smooth fresh tasting oil that is almost buttery with a peppery finish. In addition, it is cold pressed and milled to the specific standards to be called Extra Virgin Olive Oil .
