A big happy birthday to Pete, one of our incredible owners and the heart of our restaurant group! Pete is our go-to guy for everything, whether it’s fixing something behind the scenes, jumping in as a front-of-house manager, or keeping things running smoothly in the kitchen. Many of you might also know him as the ‘shoe guy’ from his longtime ownership of Naperville Shoes, which he recently closed to focus on VAI's and Entourage.

Pete’s dedication, hard work, and problem-solving skills are just a few of the reasons we’re so lucky to have him on our team. On top of that, he's an amazing husband to Sandy and an incredible father to Ari and JP. If you see Pete today, be sure to wish him a very happy birthday! 🎂🎉

Dry aging is a time-honored technique where we carefully store our cuts in a controlled environment for several weeks. During this time, the natural enzymes in the meat break down the muscle fibers, resulting in a more tender texture and a deeper, richer flavor.
