Craving some prosciutto? So are we! Let’s dive into one of our favorite types of prosciutto crudo: Prosciutto di Modena DOP. This type of prosciutto can only be made in the hills and valleys around the basin of the Panaro River. A special breed of pork is trimmed, salted, massaged, salted again, rested, and then aged. The entire process before aging can take at least 85 days, then the legs are tucked away for another 8–14 months. A lot of love goes into Prosciutto di Modena DOP.

San Felice produces a wide range of prestigious wines, like Chianti Classico, Montalcino, Bolgheri. Their estate-grown grapes are divided among 20 different labels, each with a unique taste and experience. Part of San Felice’s mission is to give back to the land that has made the vineyard what it is today. For over 30 years, they’ve collected and classified over 270 grape varieties in their Vitiarium to protect the genetic heritage of Tuscan viticulture.

Welcome to the “ankle” of the Italian boot, Regione Basilicata! This region is among the hilliest and most mountainous in all of Italy — only 8% of the land is considered flat. Its most famous wine comes from Monte Vulture, an extinct local volcano and the only DOCG in the region, Aglianico del Vulture Superiore DOCG, is considered among the top southern Italian wines. This rich red wine is surprisingly high in acid, with bold tannins and intense concentration. Regione Basilicata also produces fantastic white, rosato, and even sparkling wines. Famous amaro producer Lucano is also based in Basilicata and has been in operation for over 130 years.

When the Ancient Greeks called Italy “the land of wine,” they were actually referring to southern Italy, in particular to the inner area of Basilicata! The Frecce Tricolori Aeronautica Militare’s team are back in the USA after 30+ years! 🇮🇹✈️ A symbol of the Italian flag, the world’s largest aerobatic patrol recently lit up the New York City sky with stunning aerobatics in the iconic tricolor, delivering a 30-minute display with pure Italian flair. To commemorate this historic visit, our Eataly Downtown team met the Italian Air Force representive of the Frecce Tricolori for a dinner featuring beloved Italian staples.
