BEEF LENTIL STEW. I will be cooking some version of this on repeat all fall/winter-long 🍂 🥩 🍲
Stews are very forgiving. They’re hard to mess up and you can freely skip, add, or replace ingredients based on what you have. Cook longer or shorter; in a crock pot, on a stove top, in the oven; it’s all good. Use the best quality ingredients you can afford and enjoy!
1) Put some olive oil in a pot, get it nice and hot, but shy of smoking. Once it’s really hot (you can tell by how it shimmers) add stew meat (animal of your choosing, I used 2/3 pound beef). Stew meat is typically the cheapest cut because it takes the most effort to cook, but as you will see it also is the most rewarding once done.
2) Cook until golden brown and crusty on all sides. This takes about 2-minutes per side. Most common mistakes here: moving the meat around in the pot (don’t stir!) which prevents it from forming that crust; cooking on too low of a flame so that it’s not hot enough to brown; crowding the pot with too much meat at once which lowers the temperature in the pan and creates a steam effect. Or skip this step altogether! Will still be delish.
3) Once browned, remove the meat and set aside on a plate. Add 1 diced onion to the same pot and sauté in the leftover juices on medium high, until translucent.
4) Add one carrot and equal amount of chopped celery to the pot and keep sautéing on med/high heat.
5) Once they have softened and taken on some color (about 5-10 minutes) add 1-2 cups of canned tomato (purée, diced, whole, or fresh, whatever). Turn heat down to low and cook for 10-20 minutes.
6) Add meat back into pot. Add 1-2 cups of old red wine (beer, or extra broth works as well). Turn heat up and let this liquid reduce by half (about 5-10 minutes)
7) Add a 1-2 quarts of broth (chicken or beef broth both work). Also add some herbs like bay leaves and thyme. I used 2 dried bay leaves and 2 sprigs of fresh thyme (remember to pull them out once done). I also added 1 chopped potato.
8) Bring to a boil then place in oven at 325.
9) After 3 hours add one cup of lentils. Put back in oven for another 45 minutes or until lentils are done.
10) Enjoy on its own or over a base 🧡
