Good morning, Flatiron! We’re open today for Labor Day from 8am-4pm. One extra day for our weekend special: Sea Salt Hazelnut Praliné Flan, with silky hazelnut custard, crispy Valrhona Caramelia (caramelized milk chocolate) feuilletine, and hazelnut praliné in a flaky laminated brioche crust, topped with Maldon sea salt to finish.
NYC! Get ready. So excited to team up with our friends at .nyc to serve up this trio of Mochi Ice Cream Temaki here at in Flatiron this weekend, from Friday 8/19-Sun 8/21. Inspired by the open-style temaki sushi that’s signature to Nami Nori, these ice cream treats are served up in crispy hand-made temaki tuile shells, in three flavors:
* Hazelnut ice cream, chocolate sea salt crispy puffed rice, vanilla mochi
* Passionfruit granita, olive oil sorbet, fresh lime zest, vanilla mochi

One of our favorite savory picks lately: our Mortadella & Burrata Laminated Ficelle, with sliced mortadella and creamy burrata cheese, sundried tomatoes, and olive tapenade, on our fresh-baked laminated ficelle bread (think: a thin French baguette but made with a laminated dough, so there’s plenty of light and airy layers inside and a flaky golden crust outside). Our weekend special in Flatiron: Tergoule, a dish that hails from Normandy, with creamy vanilla rice pudding with a hint of rum that’s slowly baked in the oven until the surface gets that deep golden crust.

THIS WEEKEND! From tomorrow through Sunday, we’ll be teaming up with our Flatiron neighbors and serving up this Korean Egg Sandwich and a sujeonggwa Korean cinnamon tea latte on the side. Starting at 8am daily until sold out, limit 2 sets per person. Fluffy steamed eggs, our homemade brioche with a glazed perilla leaf, ham, potato hashbrown, pickled moo radish, fresh perilla leaf, and a slick of spicy gochujang mayo - it’s gonna be GOOD. Meet our Weekend Special, our final in our Everyone Can Bake series, where we asked our guests to share their favorite family recipes and pastry memories with us. Here’s Christina’s Hokkaido Milkbread Doughnut, filled with Thai tea cream. Christina is a California native, and was craving the fluffy doughnuts from her hometown, so she decided to make her own, using a Japanese shokupan (Japanese milkbread), and filled them with flavorful Thai tea cream, what she calls the perfect pairing. Meet the first in our Everyone Can Bake series: Marta’s Szarlotka (Polish apple pie)! We asked our guests to share their favorite family recipes with us, and we’re honored that Marta shared her grandmother’s Szarlotka, a traditional Polish apple pie made with fresh apples and a crumbly crust on the outside. Marta told us her grandmother used to make this for her growing up in Poland, using apples from their backyard. She adds almonds into her crust, for a beautifully nutty flavorful finish. Available especially for this weekend, today through Sunday, here in Flatiron. 🍎

FRI 1/21-SUN 1/23: Marta’s Szarlotka (Polish Apple Pie), something her grandmother used to bake for her and her siblings in Poland using apples from their backyard, with a crunchy buttery crust and vanilla apple filling.

FRI 1/28-SUN 1/30: Carlos’s Mexican Conchas, the traditional Mexican sweet bread with that beautiful crisp crust; it’s what got Carlos into baking and reminds him of visiting bakeries in Mexico and getting them right out of the oven with a cup of coffee.

FRI 2/4-SUN 2/6: Rachel’s Chocolate Hazelnut Babka, the Jewish classic studded with chocolate and hazelnuts throughout; Rachel baked these for her high school teachers and family during the pandemic, even snagging a spot at her local farmers market where her customers told her that her babka reminded them of their own grandmother’s recipes.

FRI 2/18-SUN 2/20: Christina’s Hokkaido Milk Bread Doughnuts with Thai Tea Cream; Christina was craving the filled-to-order doughnuts she used to get at a small shop in her hometown, and as she’s half-Japanese, she developed a fluffy shokupan recipe and filled them with Thai tea cream - what she calls her favorite pairing.
A few of our favorite things: our Laminated Ficelle Sandwiches, served daily from 10am Mon-Fri and 9am Sat-Sun. A thin French baguette made with flaky laminated dough for all those light and airy layers; choose from classic Ham & Brie with cornichons and Dijon; a melty gooey Triple Grilled Cheese with sliced apples and honey (served warm); Smoked Salmon with crème fraîche and briny capers; and Mortadella with sundried tomatoes and olive tapenade. It’s that time of year, when we make our Galette des Rois. The traditional French king’s cake, made with a flaky puff pastry crust filled with creamy almond frangipane, hand-scored on top to resemble a crown. Think of it like an almond croissant in cake form. Ours uses a reverse puff pastry, so the butter block is on the outside during the lamination process, resulting in a beautifully golden and caramelized crust with an extra flaky texture. Beautiful. Each comes with a golden paper crown and little fève to hide inside, so whoever finds it in their slice is deemed king or queen for the day. 👑 Preorders are up now at DominiqueAnselWorkshop.com for Flatiron pick-ups, Dec 26th-Jan 23rd.
