Our ode to the beloved fruit, our “Jungle Nerd” uses every part of a pineapple. The pineapple garnish undergoes a process called , typically used in corn masa preparation, where we soak it in a calcium hydroxide solution to harden the texture and then cook it with hibiscus tea to enhance its flavor. Finished with a touch of lime zest, it’s the perfect complement to our modern twist on the classic Jungle Bird.

A drop of olive oil macerated with freeze-dried olives completes “The Dirtiest Martini” which is made without using any olive brine. How this is done is by using the sous vide method to infuse with freeze-dried olives, which ensures a pure olive flavor without diluting the drink with brine or water content. A dash of white soy sauce adds a subtle saltiness, enhancing the drink’s depth of flavor.
Make it extra dirty with our DIY garnish of house-made olive powder, made from freeze-dried olives, olive leaf, green Szechuan peppercorn, and tapioca maltodextrin.

Our take on the classic Espresso Martini, which we’ve reinvented as the “Latte Martini”. This foamy cocktail features No. 23 Solera-Aged Rum, Ayuuk, and 10 Year Sercial Madeira that’s blended with soy milk and infused with rich coffee flavor. A touch of lactic acid adds a subtle tang, while hints of white soy and old-fashioned syrup round out the flavors.
