Wheated is a sourdough pizza, classic cocktail, and whiskey bar open in the Flatbush/ Ditmas Park area of Brooklyn.
We have 900+ unique whiskies on hand including many incredibly rare and hard to find bottles. Wheated is a pizza joint and cocktail bar in the Flatbush/Ditmas Park area of Brooklyn. Our dough packs a lot of flavor with only natural sourdough leavening, hand mixing, and long fermentation. Cooked in our custom high temp electric oven to produce a pizza that is thin crust, with just right amount of crispiness and chew. Our cocktails lean towards the classic without the pretense.
Dough, sauce, cheese. In contrast to dough, cheese, sauce.
I was thinking of adding a straight tomato pie to the menu. Any fans out there? Would be our tomato blend, a fruity olive oil, Sicilian oregano and a big handful of Romano before bake. You could add garlic but I leave it out. Definitely leaning New Haven style again for this.
Delicata squash with a honey kimchi glaze, tahini cream sauce, white onion, mozz, Parmigiano-Reggiano, balsamic. We will do small pies only for this one.
A little sweet, a little sour, a little savory. Addition of bacon would not be a bad call if you are into that.

This is one of the lesser talked about pies on our menu. The East Williamsburg - fresh and aged mozz, sliced crimini mushrooms, and truffle salt.
We'll be making pies from 5pm until 8:45pm. Happy hour from 5-6pm, $4 off menu cocktails and $5 beers.

I drove to NJ yesterday morning for this thing. Hoping it will be the route to in house ice cream and sorbet. The fact it is barely used has me a little concerned about its usefulness. I may start a new handle, if it is not useful. Anyone else remember 'Will it blend?' videos from ?
Having this basically puts Wheated on the same level as El Bulli. The Michelin stars are gonna just start rolling in now. I can almost taste them.
The real reason? My wife ordered a Ninja Creami and my overcompensating competitive side just kicked in big time. Don't tell her ;)

These pics popped up on my memories today. It is the opening of the coal fired bread oven that you used to be able to see in our boiler room, now covered up by National Grid as a fire hazard???? If you sit in our backyard, you are sitting on top of this.

Top an example of our dough stretched for our 'NY style'. Bottom is stretched for our 'New Haven' style. Both of these are done with the same dough, only by hand, but treated differently for different end results but similar center thickness.

I was too late to sign up for the official Negroni week. So I am taking the opportunity to raise money for one of Kim and my favorite organizations, Sean Casey Animal Rescue. Great times and even better pizza was had last night at the New Haven Apizza Feast. I was there at the tent and we raised $1500 for featuring the Chicago tavern style pizza from . And, as generally recognized by one random lady who came by, I was making the best New Haven style pizza they had evvvvaaaaaa.had!
Tonight and all weekend, we'll be serving up our sign-off to summer cocktail, the cucumber mint cooler ($10 all night each night.) Cucumber, mint, fresh lime, .hamilton.distillery vodka and a little sugar. Served tall with seltzer.

Thinking about a mustard pie. Anyone a fan? I have been playing around here but have never had one at a place.that.serves them (Trenton NJ) . Pretty simple in concept but I am thinking of a slight twist I have preferred. I like the regular old yellow mustard better than the traditional spicy brown (or Dijon for that matter). The YELLOW MUSTARD pie.
With banana peppers, vinegar notes are prominent (in a good way). But without it, the mustard notes come out more in a subtle and really interesting way. Considering it as a special this week?
Meatballs two ways. NY Slice Style pie with meatballs added, or start with our meatballs with marinara, fresh ricotta and Parmigiano-Reggiano.
Maybe both?!

Basil is a fragile herb. Many times it arrives blemished or completely unusable. In Brooklyn we are lucky to have one of the best local, urban producers . Top quality stuff I tell you and worth the expense and reduced aggravation.
Glad to have them as a supplier.
Tonight's service side note -kids are back at school today. We are stocked and ready to go. Beautiful weather. Backyard is open.
Had the pleasure of having Barry from visit recently. I have to say I am a fan of his videos. I would be regardless of the visit.
Pizza is really subjective. Tied up with tastes, memories, and what you are used to enjoying. Maybe our pizza is not for you. BUT, what I can say is IT AIN'T THE WATER. Lol, the NYC water question happens a lot when I speak to folks about Wheated in Louisville. I am very proud of what has been accomplished in Louisville. I felt confident we could do it. It was not until a large amount of time and money had been invested that I baked our first pizza in Louisville. A huge relief when we saw and tasted. Then there was the question of how accepting Louisivlle would be to what we did. I was prepared to try and talk it up. "Just give it a try, I think you will like it." And if that did not work,. I was prepared to step back from being baked 'well done'. All that worrying for no reason - Louisville has been amazing.
In short, I watch that video and I can confidently say - what you get up here in Brooklyn is what you will get down in Louisville.
