Cameron Pinot Noir Abbey Ridge Dundee Hills 2021
After earning a PhD in Marine Biology in the mid-70s, John Paul Cameron chucked it all and went to work in a California vineyard for $5 an hour. After a stint as the assistant winemaker at Carneros Creek in Napa Valley, he purchased a vineyard in the Dundee Hills within Oregon’s Willamette Valley. Today, his wines are as much an expression of his irrepressible personality as they are the Dundee Hills terroir he champions.
As a new year begins, it feels like a good time to introduce the team members that will be taking care of you in 2024. We begin with four questions for our Executive Chef Jorge Luis Pabón, who grew up in Puerto Rico, studied philosophy, and now runs our kitchen at 47 East Houston Street.
Luscious chocolate cake, black sesame ganache, and, to top it all off, plenty of whipped cream.

Domaine Jean Chauvenet Nuits-Saint-Georges 2018
Since 1994, Christophe and Christine Drag have ushered in a new era for the storied Chauvenet domaine, veering away from chemical treatments and embracing a natural approach. The Nuits-Saint-Georges village appellation represents the bulk of the holdings, more or less seven hectares of vineyards spread across several parcels principally located in the northern reaches of the village, on a combination of silt, sand, and gravel soils, which produce a classic and elegant expression of the appellation
A cross between Asia and Spain and an all-time estela classic: The Fried Arroz Negro with Squid and Romesco.

Gut Oggau Blaufränkisch ‘Josephine’ 2018
Bright yet autumnal, this blend of Blaufränkisch and Rösler is another marvel from Stephanie and Eduard Tscheppe. 35-year-old vines on limestone soil. Eight months in oak. Unfined, unfiltered, with zero added sulphur.
We open the bottle at 5PM.

On Wednesday, November 29th, estela and Banville Wine Merchants will welcome one of the most important (and amazing) young producers in the Rhône Valley: Julie Bott of Domaine Bott. After training with Stephane Ogier, Julie and her partner Graeme Bott created their own estate, planting Viognier and Syrah vines in the appellations of Condrieu, Côte-Rôtie, Saint-Joseph, and Seyssuel. Less than a decade since releasing their first vintage, they are on the cusp of global renown.
This intimate event will feature a four-course menu designed to complement the extraordinary wines Bott has selected to showcase for the occasion.

Mas Jullien Languedoc Rouge Terrasses du Larzac ‘Autour de Jonquieres’ 2016
Mas Jullien controls 15 hectares of vines scattered around the village of Jonquières, north
of Montpellier and 40 km inland from the Mediterranean. The vines grow on rocky terraces at some of the
highest altitudes in the region. Olivier Jullien's triumph is to be found in the bottles of wine he has produced and continues to produce that are so important and compelling.
Aged two years in a combination of demi-muids and large foudres, ‘Autour de Jonquieres’ is built
on the back of old-vines Mourvedre (40%) planted in limestone soils, with 40% Carignan
and 20% Syrah as well—also from very old, minuscule-yielding vines.
On Halloween eve, it’s a magnum full of 'Hokus Pokus' from one of Austria’s leading lights:
Christian Tschida Cabernet Franc ‘Hokus Pokus’ 2017
Obsessiveness and attention to detail have allowed Christian Tschida to become one of the top producers along the eastern shores of Lake Neusiedl in the Burgenland in Austria. His focus on purity of fruit and fondness for lower-alcohol wines were initially balked at by the more traditional vineyard managers of the area, but now Tschida’s great farming practices and low-intervention processes are leading the way. His Hokus Pokus red cuvée is an old vine Cab Franc offering found only in magnum!

Gilles Guillaume Cornas Nouvelle ‘R’ 2020 [$28]
The "R" stands for Les Rieux, a vineyard that Gilles planted in 2010 that sits 450 meters above sea level, above Cornas. The vineyard is white granite soil that had never been planted before due to concerns that grapes would not achieve proper ripeness. The wine is only 12.5% ABV, low for this type, lending it an elegant brightness
Those two tables hidden by the window—every regular’s favorite, aside from the bar.

Each dish will include wine pairings from Stefan Vetter, a trailblazing natural wine producer from Franken, Germany.

About Us
Estela is a restaurant in downtown Manhattan from chef Ignacio Mattos. Set one floor above Houston Street, it is a bistro at heart, taking familiar ideas like tartare, ricotta dumplings, burrata on toast, fried rice, and steak, and presenting them in new, satisfying ways. Ignacio Mattos, Owner and Chef
Ignacio Mattos is the chef-owner of New York restaurants estela, Café Altro Paradiso, and Flora Bar. Born in Uruguay, he has a bold, singular style inspired by the city he now calls home, time spent in Europe and South America, and the mentorship of chefs Alice Waters, Francis Mallmann, and Judy Rodgers. In 2017, Esquire named Ignacio America’s Chef of the Year. His first cookbook, Estela, was ranked one of 2018's best by the New York Times Book Review.
