I made chicken nuggets in the air fryer! Using plant chicken pieces and my own breading and batter.
4 oz plant chicken pieces, thawed
Liquid:
- 1/2 cup unsweetened almond milk
- 1 tb ground flax seed
- seasoning to taste (I used garlic powder and Trader Joe’s umami seasoning)
Flour:
- 1/2 cup tapioca starch
- 1/4 cup almond flour
Breading:
- 1/2 cup course corn meal
- seasoning to taste (I used garlic powder, onion powder, white pepper, and Trader Joe’s umami seasoning)
Mix ingredients for liquid and flour and breeding separately. Dip chicken pieces into liquid to coat, then into flour mixture, then into liquid again, then into breading.
Lay breaded pieces into air fryer basket in oneone layer. Spritz lightly with mildly flavored oil.
Air fry for 12-15 minutes at 360° F for 13-15 minutes. Flip halfway through.
Enjoy as-is or with your favorite dipping sauces!
Yields 2 servings. 250 calories, 15 g protein, 34 g carbohydrates, 6 g fat, 5 g fiber.
Quite possibly one of the most painful sequences we’ve done since pre-pandemic. The digging of the hoop into the IT band, inner thigh, and ankle almost makes me not want to do this but the shapes are so cool!
For the private I taught today, I put together the (aka ) sequence and this top bar split (name unknown), the latter of which we did almost exactly two years ago. And then I added the just because I could. But holy scraping the skin of my back in the slide down. 😫

Pretty much the same sequence as last Sunday but includes the mount and dismount, and refining some of the movements and transitions in the hoop. I think this is probably a little more fluid. Keeping the audio on for ’s exuberant reactions! 😂💜

Oops. I stopped updating this blog in December 2018. Life got a little hectic, but now I want to get back to regular (or at least semi-regular) posts here.
One of the biggest things to have happened in the past seven months is that I took my second-ever trip outside of North America – to Europe! For a big milestone birthday, I decided to spend my actual birthday in London, and then visited Munich, Salzburg, Linz, and Prague.

Doing nutrition workshops with the Wendy Hilliard Gymnastics Foundation has been one of highlights of the past year - teaching kids about balanced meals and healthy eating to not just be healthy but to help their gymnastics!

Hope those of you in the U.S. who celebrated Thanksgiving this past week had a nice holiday, whether it was with family, friends, or some needed alone time! Holidays such as Thanksgiving tend to revolve around food, but it doesn’t necessarily have to either! To me, Thanksgiving is more about acknowledging the things in your life that you are grateful for.
But one of the things I am grateful for is good food — specifically, good VEGAN eats!
