"What dishes am I most proud of? It has to be the enchiladas cause that was a way to incorporate my Mexican flag into Proper, and in NY I would say it was when we brought on the Chimichurri Hanger Steak. That one was me having to learn how New Yorkers ate; cause in the beginning when we brought the concept out here I quickly found out San Franciscans and New Yorkers have very different palates. So after some fast thinking and looking at trends, we tried it out and wham it was a hit. Now we can’t picture it not being on the menu."
