It was an honor to be invited back to lecture at AUR. The Graduate Nutrition and Food Studies students exceeded my expectations. They had thought provoking comments and were incredibly engaging. To work with Professor Mefleh was a privilege.
Comparing markets in Italy—indoor market in Rome, outdoor market in Rome, outdoor market in Prato—they are all #1. The markets are filled with warm bread, luscious veggies, juicy sweet fruits. I cannot wait to make dinner and dessert.
Taking a break from work and walked to the park by the University. Breathing fresh air and connecting with nature—even in the middle of a city—should be part of a nutrition plan.
We learn in different ways. We nourish our bodies in different ways. Discussing the latest nutrition science—fodmaps, IBS, IBD, inflammation, malnutrition and obesity, mental health—with colleagues over food and wine is an extraordinary way to gain a deeper understanding of nutrition science. Looking forward to my lecture at AUR.
GASTRODIET2023 Prato, Italy was amazing—insightful lectures and amazing people from around the world. I’m settled into my apartment in Rome and dinner is from one of my favorite local spots. It’s a big plus that Rome is gluten free friendly. Prep for my lecture begins.
First day of the GASTRODIET 2023 conference Monash University Prato, Italy. It was great. Looking forward to a deeper dive into GI problems and low fodmap diet, and using the information to better help my patients. Meeting colleagues from around the world is icing on a low fodmap cake. Can’t wait for tomorrow.
