ГРЕЧКА С МЯСОМ! 🍖 BUCKWHEAT PORRIDGE WITH MEAT is a quick and easy recipe made of «Grechka» - buckwheat in Russian. This porridge, almost pilaf, is delicious to eat with fresh salad, pickled cucumber or sauerkraut. Grechka is a healthy product: it’s rich in protein and its slow-releasing carbs give a lot of energy for a long period of time.

Ingredients:
- buckwheat 200 g
- meat 250-300 g
- onion 150 g
- carrots 200 g
- garlic 3-4 cloves
- vegetable oil 100 ml
- salt to taste
1. Cut the meat into small cubes, onion into half rings, cut carrots into short strips 0.4-0.5 mm thick. Chop the garlic coarsely. Rinse buckwheat well.
2. Heat oil in a frying pan and fry the onion for 3-4 minutes. Add meat and fry, stirring occasionally, until the juice evaporates. Add carrots and fry for another 4-5 minutes, stirring.
3. Add buckwheat, mix thoroughly and fry for another 2-3 minutes. Pour boiling water over the buckwheat so that the water level covers the buckwheat by 2 cm. Bring it to a boil, add salt. Cover and cook over low heat for 15 minutes. Turn the heat off and keep it covered for 10 minutes more. Open the lid and stir.
Enjoy your meal!

Чеснок крупно порубить. Гречку хорошо промыть.
2. Разогреть масло в сковороде и обжарить лук в течении 3-4 минут. Добавить мясо и периодически помешивая жарить пока не выпариться сок. Добавить морковь и продолжая периодически помешивать, жарить ещё 4-5 минут.
3. Добавить гречку, тщательно перемешать и обжаривать ещё 2-3 минуты. Залить гречку кипятком так, чтобы уровень воды покрывал гречку на 2 см. Довести до кипения, посолить. Накрыть крышкой и на маленьком огне готовить 15 минут. Подержите без огня ещё 10 минут. Откройте крышку и перемешайте.

ПАВЛОВА СО ВЗБИТЫМИ СЛИВКАМИ И КЛУБНИКОЙ! 🍓 PAVLOVA WITH WHIPPED CREAM AND STRAWBERRY is a meringue-based dessert named after the Russian ballerina Anna Pavlova. It has a crisp crust and soft, light inside, usually topped with fruit and whipped cream.

Meringue:
- egg white 5 pcs
- icing sugar 200 g
- corn starch 3 tbsp
- lemon juice 2 tbsp

Cream:
- mascarpone 250 g
- cream from 33% 100 g
- icing sugar 30 g
⠀
- berries, basil
⠀
Meringue:
1. Beat the egg whites in a good foam, starting at low speed, increasing the power to the maximum. Gradually add icing sugar in 3 parts, beat until strong peaks, add lemon juice and corn starch. Cover the baking sheet with parchment, draw a circle of about 20 cm on it, put the meringue in a circle on the parchment, align. Heat the oven to 130 degrees. Put Pavlova there for 20 minutes (during this time the crust should set), then reduce to 100 degrees and dry for 1-1.5 hours (depends on your oven). When a confident crust has appeared.and the meringue easily leaves the paper, turn off the oven and leave the meringue there until it cools completely.

Cream:
1. Beat the mascarpone with cream, powdered sugar together in one go. Important: cream loves cold, so chill the bowl and whisk in the freezer for 5-10 minutes.

2. Put the cream on the cooled meringue. Decorate with berries and basil leaves. Enjoy with a cup of tea!

ПИРОЖКИ С КАПУСТОЙ! 🥐 PIROZHKI WITH CABBAGE are made from soft, fluffy dough. Pirozhki are translated into English as pie, yet it would be more accurate to call them buns. Soft as a pillow, caramelized on the edges and stuffed with rich fillings.

Ingredients:
Dough:
- white flour 3 cups
- warm milk 1 cup
- sugar 1 tbsp
- vegetable oil 3/4 cup
- dry active yeast 1 tsp
- salt 1/2 tsp
Filling:
- cabbage 500 gr
- carrots 2 medium
- large brown onion 1 piece
- vegetable oil 1 tbsp
- salt and pepper to taste
1. Mix the yeast with 2-3 tbsp. of lukewarm water and 1 tbsp. of flour. Leave to activate for 10 minutes.
2. Sift all the flour into a bowl and add the sugar and a pinch of salt. Stir to combine.
3. Pour in the remaining warm water and the yeast mixture and start mixing the dough with a wooden spoon.
4. Add all the vegetable oil and knead for about 15 minutes with your hands until you have a ball of soft dough.
5. Place the ball of dough into a greased bowl, cover it with a damp tea towel and leave it in a warm spot to rise. While the dough is rising make the filling.
6. Place a frying pan on medium heat with a splash of oil. Chop up the onion into thin half-rings and sauté until golden. While the onion is frying, using a grater or a knife shred the cabbage into thin, long strips and grate the carrots.
7. Add the cabbage and carrots to the pan and cover the pan with a lid. Leave to cook for another 6-8 minutes until soft and buttery. Season to taste and allow to cool a little.
8. After an hour, the dough should have doubled in size. Set your oven to 180 C.
9. Punch the dough down five times and split it into balls. You should get around a dozen and a half balls that are a little smaller than tennis balls.
10. On a floured surface flatten the balls into thin circles and place two tablespoons of filing in the centre. Fold the two sides of the circle over the filling, pinching them together to form an oval pie with a ridge running down its centre.
11. Brush the pies with a little oil and set on greased parchment paper. Bake for around 20 minutes until golden brown.

УХА С КРАСНОЙ РЫБОЙ! 🐟 RED FISH SOUP or «Ukha» is a popular Russian fish soup. Usually it's made without cream, but this type of Ukha, coming from our neighbor Finland, is also beloved in modern Russia. Have a try!

Ingredients:
- salmon (or other red fish) 500 gr
- potatoes 3 pcs
- carrots 1 pc
- onion 1 pc
- small tomatoes 2 pcs
- a few drops of lemon
- low-fat cream 200 gr
- milk 200 gr
- flour 1 tbsp.
- bay leaves 2 pcs
- allspice 3-4 peas
- salt and pepper to taste
- liter of water
1. Cut vegetables and salmon into sandal cubes. Put potatoes, carrots, bay leaves, peeled whole onions and allspice peas into a pot of water, cook until the potatoes are half cooked (about 7 minutes). Add salmon and a few drops of lemon, then add salt, pepper and cook for about 10 minutes.
2. At this time, combine the cream, milk and flour in a separate container, mix. Cut the tomatoes into small pieces, add herbs and send everything to the pan.
3. After boiling, cook for a few minutes and it's ready. You may take out the onion. Enjoy your meal!

Солим, перчим и варим около 10 минут.
2. В это время сливки, молоко и муку соединяем в отдельной емкости и перемешиваем, режем помидоры на мелкие кусочки и зелень и отправляем все в кастрюлю.
3. После закипания варим несколько минут и готово. Вынимаем луковицу. Приятного аппетита!
