雞卷/Ji Juan/Ke-Kńg （有雞卷可以吃囉～）

台灣小吃雞卷裡面有豬沒雞？為什麼叫雞卷？
「雞卷」，主要內餡有豬肉，洋蔥，紅蘿蔔，魚漿、青蔥，高麗菜跟腐皮將，它有豬肉沒雞肉又叫雞卷？
雞卷為什麼裡面沒有雞？」雞卷的名字是因爲它的台語發音，在物資匱乏的年代，人們珍惜食材，把剩餘食材湊齊捲起，把加（Ke）的東西捲（kńg）起來，所以稱為「加捲（Ke-kńg）中文聽起來就變雞卷了

"Chicken Roll (Ke-kńg)", the main filling is pork, onion, carrots, fish paste, green onion, cabbage and bean curd skin. It has pork but no chicken, so it is called Chicken Roll (Ke-kńg)?
Why is there no chicken in the chicken roll? The name of the chicken roll is because of its Taiwanese pronunciation. In the era of scarcity, people cherished the ingredients, rolled up the leftover ingredients, and rolled up (Ke) things, so it was called "Ji Juan". (Ke-kńg) sounds like chicken rolls in Chinese

Blossom.
The tree in front of the store blooms at the end of April and the beginning of May every year, just when we first opened. When you see the flowers bloom, you know that another year is coming.

Our Story

The noodle shop “Wei Ming (未名)” was established by Chi Ni Hong-Ann, the first generation “Chi Mama” (吉媽媽) in Taichung city, Taiwan in 1950. Grandpa & Grandma Chi brought their memories of the home-style food with them from China to Taiwan and hand-built a small bamboo house for family living, with the original small noodle house in it. These home-style noodles & comfort foods soon became popular in the neighborhood. The original store, located at the corner of Taichung Municipal Chu Jen Junior High School (居仁國中), and the noodles sold there became embedded in many people’s childhood memories. When the 2nd generation Chi Mama married into the Chi’s family, she brought her homemade spices, hot oil, and pickled vegetables to the noodle house. With the daughter in law’s dedication, together 2nd and 3rd generation work as one so the Taichung store still continues to thrive. Meanwhile, in New York is the other 3rd generation Chi Mama, Diana Ma. She adds on to the noodle house by sharing her own childhood memories. She still remembers the taste of Da-Lu-Mian, the dish her grandma always made on her birthday ever since she was a little girl. She still remembers standing behind her grandma and waiting, while leaning over the brim of the pot to smell the aroma of the delicious soup. With this dish, we wish them longevity, or a long life. Every generation adds on their own flavor and culture.

Married into the family of the Noodle House, dating back three generations, Diana Ma started learning the Chi’s recipe at age 20. Diana studied at FIT and worked in the Fashion Industry for the past 20 years. Although she pursued her dreams at working in the Fashion Industry, she never forgot her love of cooking. She loved to cook the family recipe because the family recipe carries many memories. She had a lot of success and achievement in Fashion, but she is now ready to move on and chase her 2nd dream of sharing the authentic taste of the family recipe for everyone to cherish.

In 2018, Diana is opening up “Wei Ming (未名)”New York branch in Bayside, Queens. She named it Chi Mama’s Noodle House to continue the tradition of Chi Mama. The noodles aren’t the only thing that’s tradition; the name Chi Mama is as well. All the women married into the Chi family become Chi Mama, and it’s been that way from the 1st generation, 60 years ago.
