ORGANIC CHICKEN PAPRIKASH WITH SPÄTZLE
Austrian cuisine is heavily influenced by all the cultures found within the borders of the former Austrian-Hungarian Empire (1867–1918), which spanned throughout Central Europe. Chicken Paprikash originated among the farmers of southern Hungary, who supplied the peppers from which paprika is made, and two towns in the region—Kaloscsa and Szeged—are well-known for their excellent paprika. “Paprikás Csirke Nokedlivel” is one of the most famous variations on the paprika preparations common to Hungarian tables, which found its place in many Viennese cafés and restaurants. Our Story
In 2001, chef Kurt Gutenbrunner was asked to open a café based on the fin-de-siècle Kaffeehaus to accompany the opening of the Neue Galerie, the showcase for Ronald S. Lauder and Serge Sabarsky's lifelong devotion to German and Austrian art. Gutenbrunner took this opportunity to open Café Sabarsky, which features approachable Viennese fare, including an acclaimed, traditional breakfast menu and German and Austrian wines and beers in an elegant but relaxed setting.
Located in the elegant wood-paneled former dining room on the ground floor, Café Sabarsky draws its inspiration from the great Viennese cafés that have long served as important centers of intellectual and artistic life. While Gutenbrunner's culinary expertise compliments the museum's collection, his passion for art strongly influenced the museum to make him an integral part of the institution. The setting is adorned with lightning fixtures by Austrian architect Josef Hoffman, furniture by Austrian architect Adolf Loos, and upholstered chairs with a 1912 Otto Wagner fabric. Café Sabarsky is a proud upholder of the Viennese café tradition and an inseparable part of the Neue Galerie.
