Happy Friday! Kickstarting the weekend with another Filipino classic….SISIG! Traditionally, this dish is made with pork and seasoned with citrus, onions, and chili peppers. We mix these ingredients in a house made mayo, crack an egg on top, and garnish with crispy garlic, fresh green onions, and LOTS of chicharrones. A Filipino classic we all know and love - it’s Adobo! Using my father’s recipe, we take air-chilled dark meat chicken, sear it, and slow cook it in soy sauce, vinegar, garlic, bay leaves and black pepper until it’s super tender. Adding another layer to the traditional recipe, we use coconut milk and chilis in our version, giving your garlic rice a silkier sauce to soak up. So many flavors of the Philippines in one dish - can’t get any better than this 🇵🇭
