Dimmed lights allows you the opportunity to regroup and get those lights back as bright as possible!

You can still navigate through dimmed lights.

When I look at this, it’s hard to believe I did this!

My behind the scenes management is in charge of presentation and decor. Now, I always make sure I take the time to work on presentation!!what would Ashlee do 😩😂(fun fact I did an event last year and they thought she was the chef, I left her there to talk to the people 😩😂😂😂😂)

Today we have our DeeLuxe Seafood rice!

Ingredients: shrimp, stewed conch, snow crab legs, snow crab meat, imitation crab meat, blue crabs, yellow rice, and Good ol epis! I drizzle the sauces from the stewed meat on top for that extra flavor!

Deviled eggs, the easiest most delicate dish to mess up!

I hate sloppy deviled eggs.

What you see if before the paprika/seasoning is sprinkled.

If the presentation is sloppy before it gets to the client, when they put it out, it will get runnier and even more sloppier!

Make it a little thick so when it sets or sits out it’ll be the perfect texture!

What makes our Griot(fried pork) DeeLuxe!

I watch you guys waste seasoning(epis) making griot! When you fry meat it usually loses the flavor regardless of how long it’s been marinating!

Another mistake is NOT allowing all of the oil to soak off prior to plating leaving the plate full of oil!

Let’s try: next time you get ready to fry your meat, squeeze some sour orange on the meat(it’ll be nice and golden and not that dark over fried brown color). Make you some sauce(keep your onions/bell peppers soaking and then add it to the meat right after it comes out of the deep fryer(to keep the flavor locked in)

You’ll have some juicy griot every time!

My little sister makes the epis for all the food I cook🙌🏾 the sauce was from my mom and her pilon, which includes garlic, onions, lime juice,and hot pepper!

What makes my crabs DeeLuxe???

When I make seafood boil I make the items separately!

To get the sauce for my boil, I use the sauce from the sautéed seafood.

Because I’m Haitian, I use tomato paste add minced garlic and epis. I don’t use the old bay(don’t know how to use it, tried it before epic fail for me)

This makes it thick and also give a spicy illusion.

Also, if you don’t cut your potatoes, poke holes after they are boiled so the sauce can get all up in there while it soaks in the pan!

What makes this DeeLuxe???

I always overload my food with meat to ensure my clients gets their money worth.

The flavors are all in the epis with a splash of soy sauce and browning! Use some the juices from the sautéed meat into your rice for additional flavoring.

Fee free to garnish with the pineapple chunks, be mindful it can be overpowering to the meal if added to early.

Remember not to over cook your white rice, prior to the frying process.

The birth of DeeLuxe Catering! *long read*

Growing up I would always watch my grandmother and mother cook, they never trusted me to make a whole meal on my own 😂😂 damn Haitians.

My mother and her friend owned a restaurant in Miami on 119 street nw 10ve. For a short while, I was FINALLY allowed to assist. From there my passion for cooking began.

My most popular dish back then was POTATO SALAD, lol I grew up in “Westside” in North Miami. I remember no event could take place without my potato salad. It started with BERLYNE baby shower, then Pierre, Jean, and all kids parties in between. I was like ok this might be a thing.

I eventually learned to make different dishes, the seafood pasta was the next MUST have lol, ok cool then we come to the infamous Mac and cheese.

This is when I knew this was my money maker, back then I didn’t charge for catering, just purchase the ingredients and I got you.

Then at my jobs potlucks became a Dee is cooking and just give her the money!

When I’m upset or feeling down I cook and bake, that’s my therapy next to music!

My mother cooks better than me, for a while I had to PROVE to people that I cooked the food. TRUST ME you’d know the difference between my food and my mommas.

So the name DeeLuxe catering stemmed from be being called Dee, and luxe for luxury, because my dishes are not your average dish, there’s always something extra.

I don’t cook for the money, it’s really a passion for me.

I’ll be sharing tips to show you how I take ordinary dishes and make them DeeLuxe.

FYI- I can give you the steps and the ingredients BUT IF YOU DONT HAVE THAT EPIS OR TOUCH it’ll never be mine!!!
