The recipe typically involves cooking spaghetti and tossing it with a flavorful combination of garlic (aglio), olive oil (olio), red pepper flakes, and anchovies ๐ฟ
The anchovies add a rich umami flavor to the dish.
We also added some crunchy toasted Italian Taralli to give more texture and flavor!
INGREDIENTS โฌ๏ธ
โข Spaghetti 5oz
โข Garlic
โข Anchovies
โข Extra virgin olive oil
โข Red pepper flakes
โข Taralli or breadcrumbs
โข Parsley
โข Salt
PREPARATION ๐ฅ
- Start by boiling spaghetti 3 minutes less than package instructions.
- Take about 4-5 small taralli biscuits and break them until they have the same texture of breadcrumbs.
- At this point heat a smal skillet and toss the breadcrumbs for a couple of minute until toasted. Then leave it on the side.
- In a separate pan, sautรฉ minced garlic and anchovies in olive oil until the garlic is golden and the anchovies have melted into the oil.
- Add red pepper flakes for some heat if desired.
- Toss the cooked spaghetti in the flavorful oil mixture.
- Sautee by adding some cooking water and more extra virging olive oil.
- At this point add the breadcrumbs made with the taralli and some parsley.
- When all water has been absorbed the pasta is ready to be served

To all our foodie friends, you must try our Italian Fettuccine Pesto Genovese ๐ฟ๐
All you need is fresh ingredients as listed below and love for Italian cuisine.
INGREDIENTS โฌ๏ธ
โข Fettuccine or pasta of your choice
โข Garlic
โข Pinenuts
โข Fresh Basil
โข Pecorino cheese
โข Parmigiano Reggiano
โข Extra virgin olive oil
โข Salt
PREPARATION ๐ฅ
- Letโ start by making the fresh pesto genovese using a blender for our convenience
In the blender use 1 clove of garlic, ยผ glass extra virgin olive oil, 2 spoon of pinenuts.
- Start blending until creamy. At this point fill the blender with fresh basil (only the leaves) and blend again by slowly adding another ยผ glass of extra virgin olive oil.
- Add 1 spoon of thinly crushed ice. This will help keeping the temperature cool otherwise the pesto will warm up while blending and turn brown. Add some salt.
- Continue blending at small intervall adding more extra virgin olive oil untill it becomes creamy or the consistency you like. Just not over do it or it will become also bitter.
- At this point transfer the content from the blender into a alluminum bowl and with a spatula strat adding the cheese. About 4 tablespoon of Parmigiano Reggiano thinly grated and 2 tablespoon of Pecorino. I like to add the cheese without blending because i believe it will warm up the mixture more than necessary.
- Our pesto is ready.
- Set aside and prepare the pasta.
- Cook the pasta according to the package directions.
- Drain the pasta and add it to the pesto sauce inside the bowl. DO NOT HEAT THE PESTO!
- Toss to coat the pasta in the sauce using a spatula. If necessary add some water and olive oil.
- Finish with some fresh Parmigiano Reggiano and some basil leaves on top.
- Serve immediately.
TIPS: Use fresh, bright green basil leaves for the best flavor.

- Clean the asparagus, remove the hard part and slice them at ยผ inch length. Then add it to the skillet and cook for 2-3 minutes, or until just tender. Add the shrimp previously cleaned and cook for 2-3 minutes more, or until pink and opaque.
- Add the white wine to the skillet and cook until it has evaporated. Add the cooking water, turmeric, salt, and pepper to taste. Bring to a simmer and cook for 3-4 minutes, or until the sauce has thickened.
- Set aside and prepare the pasta. Cook the pasta according to the package directions.
- Drain the pasta and add it to the sauce. Toss to coat the pasta in the sauce (bing-bung-bang) !
- Garnish with chopped fresh parsley and drizzle with extra virgin olive oil.
- Serve immediately.

Tips:
To make the sauce ahead of time, cook it according to the directions and then let it cool completely. Store the sauce in an airtight container in the refrigerator for up to 3 days. When you're ready to serve, reheat the sauce over low heat until warmed through.
If you don't have any fresh asparagus, you can use frozen asparagus. Just thaw the asparagus before using it.

โข 1 Lemon per person
โข Lemon zest
โข Extra Virgin Olive oil
โข Butter
โข 36 months aged Parmigiano Reggiano
โข Salt
PREPARATION ๐ฅ
- Bring a large pot filled with salted water to a boil.
- Add the spaghetti and cook until al dente, 2 minutes less then package directions.
- In a bowl start shaving the parmigiano reggiano or grana padano really thin using if possible a microplane cheese grater.
- Meanwhile in a large skillet over medium heat, add ยผ cup of pasta water, lemon juice, 4 tablespoons of the butter and few drops of extra virgin olive oil.
- At this point drain the spaghetti and add them to the mix.
- Warm up the bowl and melt the butter, add the shaved parmigiano and keep mixing the pasta and the sauce. Be careful not to have the heat too high otherwise the cheese will melt and become stringy. Instead it needs to become a creamy sauce.
- Keep playing with the heat and keep mixing the pasta. Add more water and parmigiano to the mix.
- Once it reaches the desider texture then remove it and plate it.
- Finish with some fresh Parmigiano Reggiano and lemon zest.
- Serve immediately.

- Add the Italian sausages and sautรฉ for 2 more minutes.
- At this point, you can deglaze everything with some red wine.
- Let the wine evaporate and add the cherry tomatoes.
- Add some more olive oil, water and cook the whole thing until the peppers get slightly soft, and the sauce reaches the consistency you like.
- Season with salt and pepper to taste.
- Set aside and prepare the pasta.
- Cook the pasta according to the package directions.
- Drain the pasta and add it to the sauce.
- Toss to coat the pasta in the sauce.

INSTRUCTIONS FOR THE BASIL PESTO
(this is simple pesto sauce, not the Genovese)
1- Fill up a small blender with fresh basil leaves. Add 4-5 spoons of shaved parmesan cheese, a pinch of salt and start blending the mixture by slowly adding extra virgin olive oil.
2- Keep blending until it reaches the desired texture.
PREPARATION ๐ฅ
- Heat a very small quantity of extra virgin olive oil over medium heat in a large skillet.
- Slice all the vegetables, onions, garlic, bell peppers, zucchini, mushrooms, and cherry tomatoes and toss them into the pan.
- Sautee for 30 secs
- Add the green peas, and the tomato sauce and drizzle some extra virgin olive oil.
- Sautee for 1-2 min. Donโt overcook the vegetables!!
- Season with salt and pepper to taste.
- Set aside and prepare the basil pesto sauce (see instructions below)
- Meanwhile, cook the pasta according to the package directions.
- Drain the pasta and add it to the sauce.
- Toss to coat the pasta in the sauce.
- Finish with some fresh Parmigiano Reggiano and some basil leaves on top.
- Serve immediately.

8. Add the pesto sauce mix everything with a spatula and turn heat off

10. Meanwhile, cook the pasta according to the package directions.
11. Drain the pasta and add it to the sauce.
12. Toss to coat the pasta in the sauce.
