BBQ & Beer Joint We are a competition BBQ Team. This page was set up to share our experiences with our close friends. Oh, and drink a little beer too!
We started out cooking on the weekends out on our back porch and decided to try our hand at local competitions. Our goal is to smoke some fantastic BBQ and maybe win a little money while doing it.

Back home and back to work. We had a fun weekend despite the rain and the cold weather at the BBQ competition. We ended up getting 7th place in chicken, 8th place in brisket, and 1st place with our beans! The ribs didn’t do as well this go round…so we’ll work on those some more. Overall that put our team in 9th place for the event!!!!
It’s a full house! This is the first time to attend a BBQ competition that we are taking everything including the golf cart. It’s tight, but we got it all in there! Heading out to Joe Pool Lake tomorrow.

We’ll…..it wasn’t our lucky day. I’m a little disappointed, we didn’t place out of 39 teams. However, we did win $100 for “Luck of the draw” in the Rib category so I guess it at least paid for our fuel to get here. We’ll keep on practicing and try again next month in Grand Prairie.
And….that’s a wrap! Brisket turned in and now we wait till 4:30 for the awards. We sure hope the judges like what we turned in. We haven’t competed since November of 2019 because of Covid so we’re a little nervous!

So some lady just walked up and asked what food we were handing out…and then got mad at Allan when he said we weren’t. She then proceeded to ask why were we even out here and Allan replied, “we are participating in the BBQ competition” and she stormed off.
1st: it’s just 10:45, and nothing is finished cooking yet.
2nd: we’re not set up in the “Peoples Choice” area up front where they ARE handing out samples of other food items.
** I’m amazed at how rude some people are.

Bloody Mary Morning!! You can’t drink all day if you don’t start in the morning…and I think this is the perfect way to start today!!
2:00 am came too quick! We just wrapped the brisket and enjoying a cup of coffee till the ribs go on. More photos to come.
Start lickin’ your lips!! Today’s the day! Going to be heading out to Meridian for the National Championship BBQ competition! So get prepared for BBQ photo overload this weekend. Sorry, not sorry! PS...wish us some luck too....it's been a while since we've been able to compete due to the pandemic.
Found something new to smoke today. Beef Back Ribs. These are not “dinosaur bones”, they are located on the other end of the rib cage. Slightly smaller in size and a great price. The butcher at Costco begged us to buy more as he had another full case in the cooler! The cook time was much less than dino bones we’ve smoked before. Definitely will be buying more in the future. They were great with four cheese smoked Mac & Cheese too.
Dinner has been in the smoker since midnight, just a few more hours to go. Nineteen pounder should feed the entire family with leftovers too! Drinking coffee on the back porch and enjoying this nice morning. Mouth is watering already. Come on dinner time!!!
Sunday dinner!
A beautiful start to a Sunday morning. A warm fire and a roast in the smoker.
Since we didn’t go to the competition this weekend we decided just to BBQ for the family. Our first Wagyu brisket in the smoker at 2:00 am this morning. Now we are waiting to wrap it. Drinking coffee on the back porch and it smells so good!! Three racks of ribs prepped and ready to go on a little later and our “$400 beans” in the pot. It’s going to be a very good Sunday! The Family will be stuffed! More photos to follow.
Second attempt using a pre-made pizza dough. They say practice makes perfect and our bellies love the results of practicing!!
Trying to eat healthy at dinner time….since the calories in beer tend to add up. Sacrifices.
Forgot to post this on Sunday. Smoked turkey breast and Cracker Barrel potato casserole. Delicious !!
