We supply restaurants throughout the Bay Area, and ship retail throughout CA, NV, OR, WA, ID, UT, AZ, NM.

🌾 ANDERSON RANCHES 🐑

Blessed with 45–60 inches of annual rainfall and a temperate coastal climate, the Willamette Valley is the grass-seed capital of the world. Right in the heart of that lush green utopia, Reed and Robyn Anderson raise exceptional 100% grass-fed lamb on their 1,000-acre ranch. The Anderson family has been running animals on this land for five generations.

Reed is a pioneer of vertically integrated ranching — owning the land, the lamb, and the onsite abattoir. The ranch and its ethos were a major inspiration for starting Cream Co. Reed’s animals are humanely processed at the ranch’s Temple Grandin-designed serpentine ramp abattoir. The Certified Humane experience is low stress from start to finish, which has a lasting effect on the lamb meat’s texture and flavor.

Our carcass cooler is looking on fleek right now 😎. Beautiful Vaca Viejas from two different producers (one grass finished one grain), lambs, dry-aged short loins and bone in strips. This was exactly the hope vision for this room.

Over the next month we’ll be making substantial upgrades, allowing us to better control the humidity & temperature and dial in the perfect age/hang time for all our bbs.

This is what properly aged meat looks like. Y’all can save that green/blue mold for your cheese.

A little backstory on cult favorite heritage Spanish Black turkeys:

Named for their striking inky-black plumage, Spanish Blacks are direct descendants of native Mexican turkeys brought across the Atlantic to Europe in the 1500s. The birds were bred for yield and flavor for two centuries before making their return to North America. In the colonies, they were crossed with Eastern wild turkeys and proliferated across the mid Atlantic.

Commercially viable through the early 20th century, like so many heritage breeds, Spanish Blacks fell out of favor with the industrialization of American farming. They are a threatened species today. Programs like Joyce Farms are rehabilitating their numbers.

We love the body composition of these slow growing birds. They provide an incredibly flavorful and dark-meat eating experience (think turkey for people who hate turkey). Heritage breeders often go overboard, pushing their stock to a prehistoric build: dinosaur legs with next to no breast meat. Joyce Farms' Spanish Blacks boast a balanced composition and mix of dark and white meat.

We don't often import a program across the country. These birds are more than worth it.

This Earth Day post goes out to the literal earth below our feet. Because soil health is everybody's health.

At a minimum our whole supply chain is all-natural (raised organically, free of the hormones & antibiotics pumped through the conventional meat system). But our focus is sustainable & regenerative ranching that helps restore soil health.

This is what truly pastured chicken looks like.

chickens spend their days foraging on grass, grubs, and other pastural bounty, and their nights in these remarkable mobile coops that are moved to fresh pasture every 👏 damn 👏 day.

Moving the coops provides the freshest green forage for the birds and gives the pasture time to recover and regenerate—pulling carbon from the air deep into the soil.

Could watch these in action all day.
