We were really lucky to have Dan in house all week! He and Tom totally mutilated their thirst by cupping 140+ samples which required over 280 physical cups. (That's more than we have on hand as they found out). Even with the nonstop cupping going on, Dan found time to give us a rundown on his Bullet roasting approach and to give Olive lots of scratches too. Thanks for visiting Dan, hope your palate recovers soon!

Another weekend, another Aillio Bullet roast profile. This Colombia, roasted to City+, is becoming a warehouse favorite. Beloved for its sweetness, notes of panela, honey and cocoa come through the brew. Moderately bright, this is a great coffee for roasters who enjoy toasted sugar flavors. Here's something silly we found yesterday. On the Wikipedia page for "coffee roasting," you'll see a citation for Sweet Maria's! Tiny Joy, where the information was taken, is our old newsletter — first published in 1998. Twenty six years ago, can you believe that? No link in bio this time... this shouldn't be too hard to find! (Though, if you are curious, you can track down old Tiny Joy letters in our library.)

Little coffee baby. We get a lot of light in our cupping lab which seems to promote germination. We also have a lot of little lithops aka “pebble plants” up here that love the window light. Especially with the ☀️ temperatures lately.

Iced coffee can be made fast, as you might have seen in our recent foray into flash brew. Saturating the coffee with hot water releases aromatics. Cold brew - steeping coffee in room temperature water overnight - tones down the brightness of your coffee. What you get is a less acidic, sweet concentrate to dilute to taste.

Kibirizi is a juicy honey processed lot from Rwanda. Jammy, stone fruit flavors come through the cup, but manages to keep its brightness to a minimum.
