Premiering Saturday, December 30th at 9pm – “Fully Loaded” On this episode I’m treating myself to an array of barbecued meats that are then loaded on top of other comfort classic foods. First up, is a family establishment in San Antonio, Texas serving up a generous four-taco plate consisting of pork belly, brisket, pulled pork, and shredded chicken, as well as a side of burracho beans. Next, I enjoy a hearty BBQ brunswick stew poured on top of gooey mac ‘n cheese rigatoni. The final stop has me devouring a unique BBQ burnt ends thin crust pizza with a knock your socks off BBQ sauce, and then I sit down to eat a bowl of smoked turkey gumbo with a few surprise guests and friends. I don’t only host a barbecue tv show, I actually do this. I was so inspired by the west coast barbecue scene while shooting Guy’s Big Project and Eat, Sleep, BBQ that I had to try my hand at a tri-tip. I reverse seared it in my 1000 gallon offset stick burner. Put a little smoke on it until it hit an IT of 90. Then it went the firebox, directly over super hot coals until it hit 127.
