Meredith Horton, Maribea’s chocolate maker, pours freshly roasted, cooled, and cracked cacao beans into the winnower to separate the thin outer husk and shell from the inner cacao nibs. The nibs can then be made into chocolate liquor or pressed to make cacao butter and cacao powder.
