In the highlands of central Guatemala, the city of Cobán has made a name for itself cultivating cardamom and coffee. But Cobán has a hot secret: Ever since the Maya era—as far as back as 250 A.D.—locals have grown a regional pepper now known as chile Cobanero.
This pepper inspired one of our omelets in the menu, the famous Cobanero Omelet.
Three egg omelet with carne asada, queso chihuahua, salsa cobanera, papas cobaneras and house refried black beans.

Many people find themselves wondering who invented carne asada and where this method of grilling beef came from in the first place. In fact, there are both Latin American and Mexican versions, and carne asada is among a host of other regional dishes that boast a long history. With so many ranchers and cattle in the area, by the 1500s, beef became one of the most popular sources of protein across the country. Soon after, a close relative to the carne asada we know today was created by grilling beef over a fire and then thinly slicing it.

🇸🇻 Pupusas are the beloved national dish of El Salvador, believed to originate with the Indigenous Pipil tribe over 2,000 years ago. During the 1980s civil war in El Salvador, many El Salvadorans fled the country, bringing pupusas all over the globe.
Before colonization, pupusas were vegetarian, filled with squash blossoms, herbs, and mushrooms. In the 1570s, meat became common in the filling, and pupusas are often filled with pork, refried beans, or squash.

The quetzal is a bird that has played an important role in Mesoamerican mythology and culture for centuries. The word "quetzal" comes from a word that means "sacred" or "precious" in several Mesoamerican languages. The quetzal is associated with the Aztec and Mayan gods, and is considered a symbol of goodness, light, and freedom.
The dish's origins can be traced back to the ancient Mesoamerican civilization, where corn was a staple crop and the Aztecs developed techniques to process it. The word chilaquiles comes from the Nahuatl language and means "chilis and greens".

The origins of chorizo date back to the Spanish conquest of the Aztec empire. By then (1519-1525), chorizo was already a very popular dish in Spain. As soon as they could, Hernan Cortes and his soldiers began raising pigs in order to produce chorizo in Mexico.
Toluca, in central Mexico, was one of the first places to register chorizo production in Mexico. To this day, Mexicans consider chorizo from Toluca among the best in the country.

This rare and resplendent bird, depicted here, is a national symbol of Guatemala, featured daily on the country’s flag, banknotes, coins, and stamps. Revered as ‘the most beautiful bird in all the Americas’, the quetzal has long been a sacred emblem of value not only to the Maya but across ancient Mesoamerica.
The legend of how the male quetzal acquired his red chest is intertwined with the story of a Quiche Maya warrior prince, revered as a national hero of Guatemala. Guided by his spirit animal, he led his people in resistance against the Spanish conquest. The Maya, unfamiliar with horses, mistakenly believed the horse and rider to be a single entity. This misunderstanding led Tecun Uman to tragically attack the horse first, allowing the Spanish conquistador, Pedro de Alvarado, to fatally wound him with a spear.
As the story goes, a quetzal, overcome by sorrow, landed on Tecun Uman’s chest and its feathers were stained red with his blood. According to Maya belief, since that tragic day, the male quetzal bears a red chest and will remain silent in song until his people regain their freedom.
