This Sunday, October 15th, is national mushroom day. Did you know there are over 10,000 different types of mushrooms? The Reishi mushroom, also known as the ‘mushroom of immortality’ is a woody, bitter mushroom popular in traditional eastern medicine that has demonstrated many health benefits in modern research including anti-cancer, anti-oxidant, and immune benefits. It is most commonly found and used as a powder (because you’re typically not cooking this one into a stir-fry!) - for ideas on how to incorporate Reishi into your diet to enjoy its health benefits, I’ve got a post up about it so you can learn more: https://rebrand.ly/krhmd1s

This week's essay: “My Story as a First-Generation Latina Dietitian” by Su-Nui Escobar, DCN, RDN, FAND
As a first generation Latina RD, Su-Nui has had an extraordinary opportunity to serve as a spokesperson for Hispanic communities and the Academy of Nutrition and Dietetics. She advocates for increasing support and scholarship opportunities for minority students and interns. Su-Nui founded the dietetic internship program at Larkin Community Hospital and discusses some of the barriers minority students face in the path to becoming RD’s.
This summary is adapted from an essay featured in the Food & Nutrition Magazine® published on September 9, 2020. The original blog essay can be found at:
