I was with a last minute opportunity to step up my game. Have you heard of the CulinaryLab Cooking School ? FOLLOW THEM if you like to cook. I found out the day before the class started that they still had room in the class. I was a little apprehensive? Why? Idk. Maybe I was afraid that I would learn that I don’t really know how to bake. But I went ready to learn and I learned from a really good pastry chef (and ATK tester). It was a great weekend and I’m grateful to Chef Colleen for the lessons, Sarah and John for pushing me to do it, and Chef Ryan for being a great boss to Sarah and running a really excellent cooking school. Thanks for the opportunity.
Specialty cakes I walked away with were Galette des Rois (King’s Cake), Tarte Tropezienne (a brioche with a simple syrup and a cream filling), Pink Champagne Cake (which I am freezing and saving for Galentin’s Day with my gals), and Zuccotto (a bomb of cake, raspberry cream and chocolate ganache)
It was a very good weekend .
