Ok ok...I know it's been FOREVER since I have made a post and I'm missing you guys ❤️❤️❤️
✨So here's the truth.
💜I feel have felt my creative mojo leave my body. Like I literally don't know what to post about!
😳Of course I'm still eating food everyday (keto/low carb) but when I take a video, or a photo of my food, it's literal crickets 🦗 when I go to create a post about it!
However with that being said, I decided to post this pic.
💋A look back at how far I've come. It makes me tear up on how much grit and dedication and discipline it took to get here.
I wouldn't have done this journey any other way!🌺
🌞I have been vocal in the past about wanting to be 140lbs on the scale and instead I sit here at 162lbs.
I'm not gaining and I'm not losing....
So here is what I decided to do about it...
🚨NOTHING AT ALL!🚨
👉I am going to stop putting pressure on myself to lost that last 20ish pounds I have been striving for...
👉I am going to enjoy my food and keep eating healthy
👉And I'm going to keep drinking my water and going on my walks!
🌟I am VERY happy and PROUD of my body and my mindset.
It's taken a lot to get here, but I think here is the place I was getting acquainted with me again!
Will I still be posting?
✅YEAH I WILL!

I am so thankful that these tiny balls of cabbage are so keto-friendly. And what makes it even better is that the more healthy oils you add to crisp them up, the more you stay in Ketosis!!! 🤯
🙈DISCLAIMER: If you have not had Brussels Sprouts before, don't eat too many...you might....how do I say this elegantly? Get the T***s! 💨
✨You might wonder how to prepare them for that perfect crispy outside and delicious tender inside. (Well, I'm going to tell you)
👉I have found that in my oven or air fryer, 365 for 16-18 minutes is perfect for how I like them!
🥬When I would make them in the past, I would always chop them in half, and season them with some onion powder, garlic powder S&P, and some EVOO! Boy! They're so delicious!
As of late, I have discovered the SMASHED BRUSSIE!
✅I steam them in the microwave-safe bag they come in
✅Place on parchment-lined cookie sheet
✅Take the bottom of a glass and press down (they will split)
✅Spray them with Oil (either Avocado or EVOO) and season them
✅ Bake 365 for 16-18 minutes

👀I have had the chicken tender craving for quite some time now.
🌟I wanted to figure out a recipe that didn't involve using pork rinds as the breading, as I wanted to be able to offer an alternative to all of you who:
✅Don't like pork rinds
✅Don't have them available
✅Simply don't want to use them
Of course, I had to test it out before offering up the recipe, and I came up with the🎉KETO CRISPY CHICKEN TENDER WINNER!!!! 🎉

As for how they got crispy without drying in oil?
🌟I baked them on my cooling rack!!! It worked so perfectly! Both sides were nice and crispy and delicious!!!

👉Air Fry 16 minutes at 380 Degrees

😉If you give yourself 20 minutes on a Sunday morning, I have the EASIEST meal prep on-the-go breakfast for those mornings when there isn't any time to make yourself something wholesome!
🥚These little egg muffins are packed with protein, and even the keto newbie will make these delicious bites with ease.
The best part? 🤯
🎉This meal is so customizable that every week, it can be different. When things are different, it is less likely that you will get sick of it! BONUS!
✅Any type of meat (or no meat if that is your preference)
✅Any Veggies
✅Any Cheese
Here's my recipe!
🩵1 Pound of Ground Breakfast Sausage
🩵9 Eggs
🩵1.5 CUPS Shredded Cheddar
🩵1 TSP SF Ketchup
Preheat oven to 350
Press ground sausage into muffin tin forming a little cup shape
Mix eggs with spices of your liking in a mixing bowl
Shred Cheese with a Box Grater
Pour egg mixture into each ground sausage cup
Top each egg muffin with cheese (About a tablespoon each)
Bake for 20 minutes
Enjoy them on their own it with your favorite sugar-free dip! (I used ZERO SUGAR HEINZ KETCHUP)

🤷I didn't know that!!!! I thought when you eat salad, you're obviously getting in your veggies, so it MUST be healthy!
🥴Little did I know, with certain salads, I could be consuming 1000's of Calories!

One of my FAVORITE parts of this lifestyle is ditching the white meat and going for the dark! 🤣
✨We all know that dark meat is more fatty than white meat. It's juicier and more flavorful as well.
😒I find that no matter HOW I cook it, I ALWAYS dry out chicken breast (suggestions on how to make it really juicy welcome!)
🐔Chicken legs, chicken thighs, chicken wings are always on the menu though.
👉Besides being so forgiving (basically you can't dry it out) it's perfect for beginners starting their keto journey who are not too familiar with their way around the kitchen!
🤯Weather I air fry, bake or BBQ my chicken comes out SUPER JUICY with VERY CRUNCHY SKIN...

🤷So, what's the deal with the egg fast?

🤔Let's talk plateaus.
Yes, those frustrating stretches where the scale screams "NOPE" and your progress grinds to a halt.
I mean we have all be there. In my year and a half on my keto journey, so far I have encountered at least 5 plateaus! Maybe more! They can be very confusing and most of all deflating and make you want to give up....
But then comes the day and 💥 BOOM 💥
The scale drops, but you notice something else....
Your body has changed in ways that you didn't realize.
💜Maybe your body dropped a clothing size
💜 Maybe your face looks a little less round
🫶 Keto can be lonely sometimes.
🥰 But remember, you are not alone in this plateau pit stop.
Here's how I am shaking things up:
💪Tracking my macros: Sometimes, it's not carbs, it's sneaky calories hiding in plain sight.
💪Moving my body: A brisk walk, a burst of yoga, it even a few crunches! It gets that blood flow pumping and metabolism moving.
💪Giving my metabolic engine a mini-shake: Yes, you read that right. A strategic non-keto meal, carefully planned and timed, can actually jumpstart your system and breakthrough that frustrating barrier.
🙏But most importantly, I'm remembering this: perseverance and hard work always pay off. We've come too far, learned too much, and felt the incredible benefits of keto to let a little plateau derail us.
So, let's keep sharing our stories, cheering each other on, and proving that plateaus are just temporary bumps in our keto journey. Together, we'll smash through them and keep climbing towards our goals.
