As I have mentioned on here before, I believe the right recipe for the future Nick's Pizzeria would likely include a partnership with an existing sports bar or a small group of owners with bar ownership/management experience. I have learned that a location in South Johnson County near the soccer complex may be coming available at the end of the month. I have spoken with the current owners about a partnership; however, at this time, I believe their preference would be to sell to new owners. This is a turnkey opportunity as it is a fully operational location (bar & restaurant equipment, small wares, tables & chairs, TVs, etc... are in place) minus the pizza equipment which I currently have in storage. I believe the current landlord is looking for a five-year deal with some possible TI incentives. I feel this space offers a tremendous amount of potential and I would love to discuss options with anyone who has comprehensive bar ownership/management experience and an entrepreneurial spirit. Recently, I shared a little history of Nick’s Pizzeria. Today, I would like to share how Nick's Pizzeria might look in the future.
For Nick’s Pizzeria to be a big-time, long term success, I think the right recipe includes partnering with an existing sports bar in the south Johnson vicinity that would like to add pizza to its current menu. A sports bar that is kid-friendly, but yet can generate extra business during lunch and beyond the 9 p.m. hour for the adult crowd. A cold beer while catching a game just feels like a natural fit for Nick's pizza.
While I believe a partnership with an existing sports bar would result in optimal synergy, I am open to other options as well. Currently, I have all of the equipment necessary to reopen in the right location, more importantly, with the right strategic partner(s).
Why am I sharing all this information with you? Because perhaps you are the link to the ideal strategic, business partner(s) for Nick's Pizzeria. Right now, I need your help to bridge the gap in meeting that perfect strategic partner(s) to begin serving Nick’s pizza again. I would like to thank all of the Nick’s Pizzeria fans for the responses over the past couple of weeks. They have definitely helped reinforce my desire to bring Nick’s Pizzeria back! One of the many things I have learned is that it takes a small team to run any business, especially a restaurant. That said, education and experience are also key to making any great business/restaurant a success. Equally important is having the necessary capital to not only get the doors open, but to sustain operations during the first few years as we grow. Since closing the doors, I have realized that I will probably never have the necessary capital, on my own, to achieve such a feat. Tomorrow, I will share my ideas on how to overcome that challenge and my vision for Nick’s Pizzeria & Ice Cream in the future ... and I need your help. Thank you again for all of the positive feedback on my current journey to bring Nick’s Pizzeria back to its many great customers!!
The past … I am using this post to share the Nick's Pizzeria journey to reopening. Nick’s operated as a family-oriented destination for pizza & ice cream and quickly accumulated a loyal following in South JoCo and surrounding areas. Unfortunately, we ran out of time before we could become profitable enough to sustain operations. While a lot went wrong over those glorious 18 months (all of which I take full responsibility for), it allowed me to learn a great deal about what it takes to run a full-service restaurant and small business. In fact, a lot also went right during that time as well ... and I am itching for the opportunity to serve Nick’s pizza again!!
Since closing, I have gone over my business & operational plan with a fine-tooth comb and made many changes. I have attended seminars on restaurant operations/management, small business ownership and entrepreneurship. Additionally, I have spent a great deal of time observing existing restaurants & small businesses and talking to their owners about best practices.
Long story short, I am ready to get back in the game and bring Nick’s Pizzeria back to loyal customers and new patrons alike. In the coming days, I will shed light on how I envision the future of Nick's Pizzeria ... stay tuned!

I will be posting information over the next couple of weeks regarding options for reopening. Look for new information approximately once or twice a week. I will share information about the past, present and future of Nick’s Pizzeria. Any feedback (hopefully all positive!) is welcome. Interaction via comments or just hitting the “LIKE” button will be instrumental in helping future partners assess the demand for Nick’s Pizzeria’s return. We greatly miss our loyal Nick's customers; my Mom and I talk about many of you often. Target date for a return is sometime this fall! Until then ...

Things continue to move forward, not as fast as I like, but none the less. I still have a lot of things I need to complete before it is time to talk to a commercial broker about a location. Target date is towards the end of next summer. Target location is south Johnson County again in something smaller with better visibility. I will continue to keep our fans and great customers informed as new developments come about. I hope everyone had a Merry Christmas and has a Happy New Year... please be safe.

My lunch today...
An update on the status of Nick's Pizzeria... the lawsuit recently ended with the landlord, I lost the battle but won the war. Over the course of the year while we were open, a lot of rookie mistakes were made and many lessons were learned!! Right now I am working on some changes and modifications necessary for reopening. One of my biggest hurdles will be obtaining the necessary capital to get open and be able to stay open. Realistically that probably won't be until some time in 2013. Please continue to monitor this page for updates. Thanks again to the great customers who help keep me motivated to reopen... you are all missed!!

Still being a fireman, I want to remind everyone to not forget to change the batteries in your Weather Radio when you change the batteries in your Smoke Detector today when you change the time on your clocks. A weather radio can be very important to us with the springtime storms that will soon be visiting the Midwest. Having a fresh battery in your weather radio will ensure that you are protected if the power goes out during the storm.
How important are server's at Nick's Pizzeria and Ice Cream?? Is it possible to do order counter service at lunch (M-F) and traditional server's at dinner and on the weekends?

Dear Fans,
I am sad to inform you we will have to close our doors due to slow growth of the business. We will be closed on our last two Mondays (7/18 & 7/25) and our last day of business will be Sunday, July 31, 2011.
