Continuing our celebration of the Olympics, for many of us, the definitive voice of the Olympic Games is none other than Bob Costas. An American journalist famous for his coverage of the Olympics, Costas is nothing short of an American icon, and the Olympics aren’t complete without his on location coverage.

As a tribute, our Bob Costas cocktail takes inspiration from a classic root beer float, and combines a milk washed sarsaparilla infused bottled in bond bourbon, with vanille de Madagascar, and vermouth di torino, to create a slightly sweet Manhattan variation that’s perfect for sipping as we await the start of the Olympic Games at the end of this month!

A key icon of the Olympics, the Olympic torch is carried into each new venue by a team of people specially selected to be the “torch bearers”. These are typically athletes hailing from the host country and it’s considered one of the highest honors in sport to be selected for such a task!

Our Torchbearer cocktail is inspired by the eternal flame of the Olympic torch 🔥 and is made with plata tequila, lime juice, and our special “torchbearer” syrup made with peppers, mango, orange, and sugar. We then top the drink with soda to create a mildly savory, slightly spicy cocktail reminiscent of a ranch water that we think would be suitable for even the most prestigious athlete.

As we continue sharing our Summer Olympics menu, what Olympics would be complete without an over the top opening ceremony? Our Opening Ceremonies cocktail is a celebration of all things French and is inspired by one of our favorite classic cocktails, the French 75.

Made with .cognac 1840 infused with croissants, raspberry liqueur, vanilla liqueur, lemon juice, and topped with sparkling wine, the Opening Ceremonies is a refreshingly balanced drink with hints of fruit, pastry, and a lovely effervescence.

The perfect springtime red is here ‘Los Conejos Malditos’ meaning “the bad rabbits” 🐇 from our wine list 🍷 The name is a reference to the many rabbits that devastate the sustainably farmed organic vineyards, some years eating acres worth of fruit.

A fruity light Spanish red wine, made from Tempranillo grape. Made from old vines this delightfully drinkable medium bodied red screams with plums, blackberries and black tea in the glass. An unoaked wine, ‘Los Conejos Malditos’ is an easy glass to throw back in the warm spring afternoons.

Next up on our menu - the orangutan 🦧 Residing in the jungles of Borneo and Sumatra, orangutans are among the most intelligent of the great apes, and have been observed creating and using elaborate tools from sticks and stones in their native habitats. Originally believed to be a single species, as of 2017 there are officially three distinct species of orangutan, all of which are critically endangered.

Our Orangutan cocktail features a base of , with , bitter orange, blanc vermouth, and citric acid adjusted tang topped with soda water, and is a refreshing citrus forward beverage perfect for hot humid days in the jungles of Borneo, or Western Kentucky.

In celebration of Malbec World day, we would love to highlight one of our favorite offerings currently on our wine list 🍷.wine Del Mono Tinto 🍷 a 50/50 blend of Malbec and Syrah coming from the Mendoza Valley of Argentina, the official, unofficial home to Malbec.

From winemaker Matias Michelini, a pioneer of the Argentinian wine scene, 'Del Mono Tinto' is a bright and lively spring time red. With bright plum, blackberry fruit and rich strong tannins showing vanilla and cocoa throughout. The touch of spice on the finish makes this such a crowd pleasing and drinkable wine.

Chenin Blanc is a fan favorite here at The FoxBriar and this spring at the you can enjoy a glass of this light, bright, delicious white wine from the South African label .wine 🐖

Organically dry farmed from the Paarl region, early and late hand harvesting ensures a balanced wine. Bright vibrant acidity coupled with round ripe fruit yields a crowd pleasing delight. Aroma and flavors of apple and peach, coupled with cool chalky like texture and bright lemon curd acidity makes it a perfect spring time sipper!

It’s feeding time at the and the penguins are hungry! Our Penguin Feed features smoked mackerel with cracked black pepper, pickled vegetables, bourbon cider mustard, and crackers. It’s a delicious, savory snack that’s perfect to get you to your next stop on our new menu!

Next up on the tour is none other than the Monkey 🦧🐒 Some of our closest relatives in the animal kingdom, monkeys range in size, shape, and territories spanning across the globe. Fun fact: most species dwell in trees however there are some ground dwelling monkeys, such as baboons.

Our monkey cocktail takes inspiration from classic tropes such as a love of bananas and a playfulness that can only truly be captured through the spirit of classic tiki cocktails like the pina colada. We’ve used Compass Box Whisky Artist Blend scotch, with a house made banana milk, pineapple juice, lemon juice, and dark maple syrup to create a creamy, sweet, and complex cocktail perfect for the next time you swing on by!

Thank you to everyone who came out to make our opening weekend a great one! Today we’re excited to continue sharing our new menu with you and we’ll be talking about a fan favorite zoo animal: Penguins 🐧

Penguins are a family of flightless aquatic birds existing almost exclusively in the southern hemisphere. Ranging in size from the “little blue penguin” standing at around 12-14” tall, all the way to the “emperor penguin” at an enormous 42” on average height.

Our penguin cocktail seeks to evoke the feeling of stepping into the penguin house, feeling the cold air and smelling the fishy odors of a penguins dinner.

Based on a dirty martini, we’ve infused with oolong tea from our friends at , and nori for an oceanic flavor. We combine this infused vodka with olive oil washed verde vermouth to create an oily fishy cocktail we think even the pickiest of penguins would be pleased with.

Due to a myriad of factors ranging from habitat destruction, climate change, and invasive species, many animals face becoming either endangered or extinct; zoos play an important role in the preservation of some of these species. From Pandas, to rhinos, large cats, and more, zoos work to create breeding and rehabilitation programs to give species a fighting chance. Our friends at the have been responsible for bringing back the scimitar-horned oryx from being declared extinct in the wild, to now being considered endangered.

Our menu seeks to celebrate not only the whimsy of a zoo, but also the important role they play in conservation.

First up on our wine list, a lively and vibrant spring time rosé is what you’ll find in Hawksbill Rosé 🐢

Named after the Hawksbill sea turtle of the Caribbean, this wine embodies the bright sunny and salty seaside days. A blend of Pinot Noir, Cabernet Sauvignon, and Merlot, it screams black raspberry and strawberry, with salty pie crust on the finish. Truly a spring time treat! Smaller production makes this potentially a limited time wine, so get it while you can.

First up on our tour is the Tiger 🐅 Tigers are not only majestic creatures but also critically endangered. With fewer than 4,000 left in the wild, zoos serve as vital sanctuaries, providing safe havens and breeding programs to bolster their numbers. Through education and conservation efforts, these incredible institutions are key players in the fight to protect these iconic big cats and ensure their legacy roars on for future generations.

Our Tiger inspired cocktail takes inspiration from a classic Tigers Blood snow cone, as well as curry dishes found throughout Asia. Made with Peanut infused 3 star rum, framboise liqueur, coconut, red curry paste, ginger, jalapeño, acid adjusted watermelon juice, it’s then clarified, topped with a sparkling wine and garnished with house made pickled star fruit. It’s a well balanced exploration of flavors, with the lightest hint of spice and effervescence.

The values of curation, exploration, and nostalgia have all been key aspects of each menu we’ve released at The FoxBriar and our spring 2024 menu is no different. We’ve been to the cinema, toured the art museum, even trekked through our nations beautiful national parks, and beginning March 18th at 5p, we’ll be taking a trip to the zoo!

Taking inspiration from some of our favorite zoo animals, we’ve created a drink menu to celebrate the institution of conservation of zoos themselves. Join us on Friday March 22nd and Saturday the 23rd for its official grand opening and experience the FoxBriar Zoo 🐅🦧🦥🐍🦜
