We're excited to announce that with our next endeavor comes the collaborative project with Franki Spell at PhoenixPottery that we have been planning for a few months now.

She'll be using handmade clay crafting to create an old world terracotta clay fermentation vessel! This vessel will be 100 gallons and will allow us to create special small batch complex roman wines.

There has been some slight delay on initial launch by about a month, but not to be worried.

Our two wine labels have been approved by the Federal level, and are now pending TABC!

When they are approved, both The Spaniard(Natural red wine) and Golden Goddess(Natural white wine) will be available to purchase on our website through a system called Vinoshipper. Shipping straight to your door. 😍 You don't even have to wear pants!

Our first founding membership plaque! We are slowly getting them made and will be mounting them in the winery. :)

The moment we have been waiting for, for a couple years now, has now come!

Dolce Estivo Winery is now a legal wine production facility in Texas and the US.
Now all we are pending are our first two product wine labels, and then we're live!

We could not have achieved this without all of the support from friends, family, founding members, and the community. Truthfully, our goal is to be able to give back to our community karmatically once things start to go into motion.

Launch date for new product for purchase is once our wine labels get approved. Tentatively by Mid March from the most recent information from TABC.

We are in schedule to have first release of production in March! How exciting! 🤩🤩🤩

Pending wine label approvals, and finalization of G permit (which will arrive in 20~ days).

Wines available during release will be:
-Golden Goddess
-The Spaniard

Both are natural wines made using old world techniques inspired by the romans around 121 B.C. They are shelf stable and will very slowly age over time in the bottle.

This is such exciting news for us to share and I cannot wait to share with you all our passion. :)

P.S: We are working with some very amazing and important people at Sherwood in hopes of bringing our exquisite wines to your very own truly! No promises yet, but will keep you posted.

Many new things in progress as we wait for our TABC permit.
Federal permit is approved and we are in process of tweaking our formulas for submission for approval.

We have decided to add two new wines varieties to our collection for release.
Italian Vino Rosso and Vino Bianco. Will be starting a new sample batch in the next month or so.

Some new things:
-Slight adjustment to our recipe for the Roman red and Roman white, to make it more rounded.
-Starting trials on two new wines!

These two new ones I'm creating to be semi sweet acidic white and semi sweet blush rose. Perfect to drink chilled watching the sunset or on the back patio during a summer or spring day. Keep your eyes out for some content.

Things are coming together.
Set up the main primary fermenter and transfer tank, alongside the bottling unit at the Winery.

Everyone supporting us and founding members that have been there since day one, this is for you.

Now to move in storage and labeling equipment.

While we wait for equipment to arrive, we have a new passion project: Recreating the Roman wine making process.

We have teamed up with Franki Spell, owner of , to create handthrown amphora for aging!
Picture below is an amphora for aesthetics. The big project is making a replica of a terracotta amphora used to age, store, and transport wine and olive oil by the Romans 2000 years ago.

More coming later this year!

Warehouse delivery was successful.

Very excited to get things set up. Will have a couple projects in the near future:
-Built in shelving
-Sealing the floor decking and adding floor material
-Painting exterior and sealing all corners and cracks

Sales tax permit just arrived!

We have been quiet for some time building suspense for some very recent and MOST exhilarating news to share. :)

We are excited to announce that we are now partnering with our very own Thorin and Thorin Viking Brands, to bring to you production of Dolce Estivo amazing Old world Wines and Sangrias.

Dolce Estivo's wine storage and labeling warehouse is now purchased and will be set up in the best coming weeks. Permits will be submitted and underway. And we are looking towards a fun and bright community!

Thank you for everyone who has been a part of our journey, but it has just begun.
