Chef Buttegieg at the Harbour House in Malta gives his guests an inside look at his inspirations with a postcard describing his dish and the relevance of how it ties into the history of the island. I’m getting inspired. The food shown is an amuse bouche featuring a Parmesan cream inside a tart and a Carrot Ginger soup shooter.

Valentine's Day at Dunedin Mix

We are 2 months away from bringing our cheesesteaks to north Pinellas. It starts with the roll and we believe ours is perfect for a cheesesteak. We ship our rolls in from a famous South Jersey bakery that celebrated its 100th anniversary recently. Par cooked, it’s freshness will transport you to the Jersey Shore, to a sub shop in the ‘burbs or one of the famous eateries in Philly. We will be located at 990 Broadway in Dunedin at the Dunedin Mix with our new concept restaurant Spoons. Eat in, take out, or delivery.

Our team at Perfect Plates is launching a new fast-casual restaurant that will feature a unique tapas-style menu that requires a cook/chef to head a kitchen inside a food hall in downtown Dunedin.
The applicant should be self-motivated to execute a fine-dining menu with strong cooking, organizational and people skills. This start-up demands someone responsible for all aspects of running the kitchen. It also demands a professional that can work weeknights and weekends. There are times that what I do isn’t a job. Creating, planning and executing a meal for Joe and Lee was never work for me. They are such a great couple that inspires and makes it easy to light the fires and bring the magic. Their menu was a strolling style of service with items coming out at different times with plenty of options including a grazing table with Wasabi-Ginger Deviled Eggs, Louisiana Crawfish Deviled Eggs, Leek Cakes with Trout Mousse, Tropical Bruschetta with Coconut Mousse, Watermelon Bites with Whipped Feta, Peruvian Skirt Steak with Aji Amarillo sauce, Chicken Satay, Asian Cauliflower Tacos, Étouffeé Chimichangas with a Sour Cream sauce, Herb-crusted Beef Tenderloin with twice stuffed Gouda baked Potatoes.

This weekend we were honored to present a menu for the wedding celebration of Celeste Sheets and Mitch Palm. The beautiful beach side wedding in Fort DeSoto in St. Pete featured an awesome menu selected by the couple. Mezze table (Basil Pesto Hummus, Muhamarra; Fatteh, Labneh spoons; Goat Cheesecakes; stuffed Figs; Truffle-infused Mushroom Tarts; Cauliflower Tacos; Scallops on Grit Cakes and Collard Greens; Edamame Ravioli with Orange Beurre Blanc; Beef Tenderloin crostini with Red Pepper Chili Aioli, Panang Curry and a local Red Snapper Parmentier with Guanciale, Pea Purée and braised Fennel.
