Contrary to most opinions, the star of tonight's special to me, is the papas huancaina. The cold Peruvian potato made with a sauce of aji amarillo and queso fresco reminds me of summer in Peru. However, you may prefer the fresh off the boat blackfin tuna with aji aioli and roasted scallions. Either way, come try.
Nasi Goreng is the flagship dish of Bali, Indonesia. It is fried rice that is uniquely seasoned with kecap manis, a sort of sweet thick soy sauce. Almost always it's topped with a crispy fried egg sunny-side so the yolk becomes a sort of sauce for the rice. Tonight we roll out a new menu item that is unique and exciting. Balinese fried rice, crispy egg, confit duck, plum sauce.
Pan seared Mahi with ricotta stuffed-tempura zucchini blossoms and roasted Calabacita squash topped with a chive flower soubise (cream sauce). That's how we do it at St. Andrews Bodega !!!!
Tonight's seafood special is a true labor of love. House made sweet corn ravioli with lemon cream, butter poached gulf shrimp, mahi and Maine lobster. The dish is finished with some micro-planed parmesano reggiano and spicy gremolata.
Welcome to the team Chef Mike Minaj ! Allow us to introduce his first chef's creation. Tonight we have fresh blackened redfish filets served with purple Jupiter rice, baracho beans, fresh avocado and a citrus pepper cream.
Sacha inchi, or inca nut, is a seed of a fruit that grows in the highlands of Ecuador. When roasted, it's like a cross between a pumpkin seed and a peanut. We use the roasted sacha inchi to make a sauce for fish, it's most common use in Ecuador. Tonight at the Bodega our seafood special is African pompano with charred cauliflower, potato puree and roasted sacha inchi sauce.
