You can whip up a high-protein breakfast in just a few minutes.

🔥 Idea 1: Stir 1 scoop of protein powder into your oatmeal
🔥 Idea 2: Make an “egg in a mug” by coating the inside of a cup with non-stick spray, adding 1-2 eggs, and stirring them. Microwave for 60-90 seconds, until done
🔥 Idea 3: Top a slice of sprouted grain toast with low-fat cottage cheese and some nuts

What are some of the top foods I can eat for more energy?
💪The best diet for more energy has a few components, but it boils down to this:
1. A healthy balanced diet focused on whole foods: fruits and vegetables, lean proteins, complex carbs, whole grains, and healthy fats
2. Limiting added sugars and processed foods.
3. Eating throughout the day at regular intervals and not undereating or overeating.
4. Limiting alcohol

What about all of those Easter sweets? Finish off your Easter feast with a lightened-up treat starring all kinds of better-for-you ingredients.
Hazelnut Carrot-Oat Cupcakes with Cream-Cheese Frosting
Ingredients:
3/4 cup oat flour
3/4 cup all-purpose flour
3/4 teaspoon baking soda
1/4 teaspoon coarse salt, plus more for frosting
7 tablespoons skinless hazelnuts, toasted, 1/4 cup finely chopped, 3 tablespoons coarsely chopped
1/3 cup vegetable oil
1/3 cup buttermilk
2 large eggs
1 cup granulated sugar
1 teaspoon vanilla extract
1 teaspoon finely grated orange zest
1 cup packed finely grated peeled carrots (from 3 medium carrots)
8 ounces cream cheese, softened
1/2 cup confectioners' sugar
Directions:
Preheat oven to 350 degrees. Line a standard muffin tin with paper liners.
In a medium bowl, whisk together flours, baking soda, salt, and finely chopped hazelnuts. In another medium bowl, whisk together oil, buttermilk, eggs, granulated sugar, vanilla, orange zest, and carrots until combined. Fold oil mixture into flour mixture until just combined. Divide batter evenly among lined cups, filling each three-quarters full.
Bake cupcakes until golden and a toothpick inserted in centers comes out clean, about 23 minutes. Let cupcakes cool in pan 15 minutes, then transfer to a wire rack and let cool completely.
In a small bowl, stir together cream cheese and confectioners' sugar until smooth; season with a pinch of salt. Frost cupcakes, then sprinkle with coarsely chopped hazelnuts.
Yields: 1 Dozen

Continuing with our healthier Easter recipes, here is a delicious side!

Baked Parmesan Breaded Squash
Ingredients
4 cups thinly sliced yellow summer squash (3 medium)
3 tablespoons olive oil
1/2 teaspoon salt
1/2 teaspoon pepper
1/8 teaspoon cayenne pepper
3/4 cup panko bread crumbs
3/4 cup grated Parmesan cheese

Directions
Preheat oven to 450°. Place squash in a large bowl. Add oil and seasonings; toss to coat.

In a shallow bowl, mix bread crumbs and cheese. Dip squash in crumb mixture to coat both sides, patting to help coating adhere. Place on parchment-lined baking sheets. Bake 20-25 minutes or until golden brown, rotating pans halfway through baking.

Nutrition Facts
2/3 cup: 137 calories, 10g fat (2g saturated fat), 7mg cholesterol, 346mg sodium, 8g carbohydrate (0 sugars, 2g fiber), 5g protein. Diabetic Exchanges: 2 fat, 1 vegetable.

Easter is coming up soon and just like with any holiday, the chances of overeating and/or eating unhealthy are very common! So I'll be sharing some healthier Easter recipes over the next couple weeks so I hope you enjoy!

First one is an Orange-Glazed Pork Loin
Ingredients:
1 teaspoon salt
1 garlic clove, minced
2 to 3 fresh thyme sprigs or 1/4 teaspoon dried thyme
1/4 teaspoon ground ginger
1/4 teaspoon pepper
1 boneless pork loin roast (5 pounds)

glaze:
1 cup orange juice
1/4 cup packed brown sugar
1 tablespoon Dijon mustard
1/3 cup cold water
1 tablespoon cornstarch

Directions
Preheat oven to 350°. Combine the first 5 ingredients; rub over roast. Place fat side up on a rack in a shallow roasting pan. Bake, uncovered, for 1 hour.

Meanwhile, in a saucepan over medium heat, combine orange juice, brown sugar and mustard. In a small bowl, mix water and cornstarch until smooth. Add to orange juice mixture. Bring to a boil; cook and stir 2 minutes. Reserve 1 cup glaze for serving; brush half of remaining glaze over roast.

Bake until a thermometer reads 145°, 20-40 minutes longer, brushing occasionally with remaining glaze. Let stand 10 minutes before slicing. Reheat reserved glaze; serve with roast.

Nutrition Facts
4 ounces cooked pork with 1 tablespoon glaze: 199 calories, 7g fat (2g saturated fat), 71mg cholesterol, 212mg sodium, 6g carbohydrate (5g sugars, 0 fiber), 28g protein. Diabetic exchanges: 4 lean meat, 1/2 starch
