We do roast our own green coffee beans. This is Chiapas from Mexico showing all of the stages. Green beans go in the roaster. The quiet snapping is called first crack. The loud crackle is called second crack. And finally getting the chaff off before grinding into powder.
Still working on the Thai chicken curry recipe. Its better than the last but not quite there yet.
I can tell you to avoid "Thai Kitchen" brand of anything unless you want to be disappointed in flavor, spice and heat :(

Whats cooking tonight? Well we have this amazing recipe for enchilada sauce using arbols, guajillos, and anchos, along with some sea salt, cumin, and Mexican oregano. Its really good yall! Check the video for the sauce!
Been working on this pork and black bean chili recipe. Got the spices down pat and its soo 🥰🥰🥰 Ground pork, black beans, jalapeno, onions, tomato paste, diced tomatoes, cumin, garlic, oregano, smoked paprika, chili powder. Sour cream of course and Monterey jack. Who's hungry lol don't worry we gonna make a video.
First run of Thai chicken curry. Spinach, bell pepper, and carrots in a curry made with red curry paste, coconut milk, and birds eye chili's. Some fish sauce for the umami. This is one we will be working on at GCFC. Its not perfect but its a great base!
The deli at Bien D**g makes yummy Vietnamese food. This spicy beef pho really hits the spot!

These fist sized biscuits stuffed with bacon, sausage, cheese and eggs are filling start to a Saturday! I get mines with a side of gravy because why not.
Bechamel is 2 tbs butter, 3.5 tbs flour, 2 cups milk and some fresh nutmeg. Make a roux with the butter and flour, then slowly add the milk. Bring to simmer until you get the desired consistency for your recipe. Then take off the heat, add the nutmeg.
Easy peasy!
Tired of the same old Christmas dishes? How about bringing this bacon and jalapeño mac and cheese dish to the family dinner!
This scratch recipe starts off with a creamy bechamel sauce, then adds some minced jalapeño, spices, and almost 2 cups of cheese. Topped with a crispy panko crust and sliced jalapeños, then a big pile of scallions - you will be requested for this dish again for sure.
