This shrimp salad is light and guilt-free, and is the perfect appetizer for tonight's meal!
Ingredients:
1 pound (450g) cooked shrimp, peeled and deveined
1 head of lettuce, washed and torn into bite-sized pieces
1 cup cherry tomatoes, halved
1/2 red onion, thinly sliced
1/4 cup chopped fresh parsley (optional, for added flavor)
1/4 cup sliced black olives (optional, for extra Mediterranean flavor)
1/4 cup crumbled feta cheese (optional, for a creamy, tangy touch)
For the dressing:
3 tablespoons extra-virgin olive oil
2 tablespoons fresh lemon juice
1 garlic clove, minced
1 teaspoon Dijon mustard
Salt and black pepper to taste
Instructions:
1. In a large bowl, combine torn lettuce, cherry tomatoes, sliced red onion, and optional parsley, olives, or feta cheese.
2. Whisk together extra-virgin olive oil, fresh lemon juice, minced garlic, Dijon mustard, salt, and black pepper in a small bowl to make the dressing.
3. Add cooked shrimp to the salad bowl.
4. Pour the dressing over the salad and gently toss to coat all ingredients evenly.
5. Taste and adjust seasoning if necessary.
6. Chill the salad in the refrigerator for 10-15 minutes to let the flavors blend.
7. Serve the shrimp salad in individual bowls or on a large platter, optionally garnishing with parsley or feta cheese.

This Dungeness Crab Spring Salad by Le Petit Eats is perfect for all the health freaks. Try out the recipe and let us know your feedback!
Ingredients
1/2 lb. Blue Sea Dungeness crab, cooked & chilled
1/4 cup olive oil
2 tbsp. apple cider vinegar
1 tbsp. honey
2 tbsp. lime juice
zest of 1 lime
salt and pepper to taste
1 head butter lettuce leaves rinsed and torn
2 radishes thinly sliced
1 avocado thinly sliced
1 mango thinly sliced
1 tbsp. minced chives
Instructions
In a small bowl, whisk together olive oil, vinegar, honey, lime zest, and juice. Season to taste with salt and pepper. Place the crab in a separate bowl and pour half of the dressing into the bowl, tossing to combine with the crab. Reserve the other half of the vinaigrette.
Divide lettuce, mango, avocado, and radish evenly among plates. Top with dressed crab and drizzle the remaining vinaigrette over each salad. Garnish with chives.

-2 Blue Sea Norwegian King Crab legs & claws
-4 tbsp unsalted butter
-2 cloves chopped garlic
-1 tsp paprika
-1 tsp dried thyme
-1/2 tsp dried oregano
-Salt and pepper to taste
-Lemon wedges for serving
-Fresh parsley (optional)
Defrost and blanch crab legs for 5 minutes. Cut open shells and melt butter in a skillet. Add garlic, paprika, thyme, oregano, salt, and pepper. Place crab legs in a skillet and cook for 5 minutes, basting frequently. Flip and cook for another 5 minutes, basting regularly. Top it off with lemon wedges and sprinkle with parsley.
