Cheese barking?
Woof woof 🐶
No, not that kind of barking. We are working on our cold season , . Each wheel is individually hand strapped with a belt of spruce tree bark as soon as it is removed from its form. We call this stage “barking”.
This winery cheese method allows resiny-sappy flavors and tannins to make their way through the cheese matrix. The cheese is supple and gets eaten by opening its top instead of slicing -while the bark circle is preserved. It can also be baked for a very easy and decadent fondue, perfect for the cold season. These will now age and get washed for several weeks before they are ripened through and ready for you.
Took a couple of weeks off from posting amidst disturbing world events that made it difficult to celebrate any achievements of human kind. Wanted to come back with something fun and hopeful alas not human…
Sometimes we need a good reminder of the miracle of our milk and its makers. A farm visit is always a good idea!
Meet some of the , rotational grazed grass-fed , and breed whose gorgeous milk makes up your cheese. We were lucky enough to take a shot just as right in front of us, in open pastures, one of the cows was giving birth. These girls are so free, even the farmer didn’t notice!
Healthy stress-free cows that pasture and consume fresh grass, make for high protein, high fat, compound-rich, and flawless milk. amplifies quality as well as flaws. You cannot make great cheese without world-class milk.
I have been quiet about recent events. So many feelings: Sorrow and devastation, pain and sadness, horror, shock, and lots of anger. So many feelings, I’m too overwhelmed to summon them into anything concise. But the following PSA is in order. Please share.
While I may not be ready to face feelings in writing quite yet, it is urgent to clarify some
things as a public service announcement. I see so many ignorant comments from so many of those who shares my liberal values yet they zealously type their embarrassing ignorance and broadcast it for the world to see. Worst, it seems those who actually know the facts fail to correct them on point decisively or converse coherently.
This conflict is too complex to dumb down, simplify, or cherry pick the facts. People confuse the occupied West Bank with . They mistake everyday Israelis and West Bank settlers. They mix up Fattah, , and . They fail to distinct between Jihadist oppression, moderate Islam, and liberal values. It’s a cacophony of ignorance.
Those who think Hamas represents freedom, liberation, self-determination, dignity and statehood, fail to understand that Hammas’ purpose is to actually undermined these very values. Hammas are Iran -backed ISIS-wannabes whose objective is killing Jews to create their Islamic caliphate on the ruins of Israel. It has nothing to do with occupation. These are not the two-state-solution people of the West Bank who mostly want to live in peace, dignity, and prosperity. Hammas often murder their fellow Palestinians. They use them as human shields, use their houses, kindergartens, hospitals, and ambulances as urban bases from which they can launch rockets while cowardly hiding in civilian clothing in one of the world’s most densely populated areas. They know that Israel will pay international diplomatic cost and Jews will suffer antisemitism if they dare respond to these attacks (which they are obligated to, precisely to protect citizens from what we saw on July 7). They don’t care if their fellow Palestinians die in the aftermath. In fact, they use this to parade their dead in front of foreign news crews as PR props for propaganda aimed at progressive westerners. This group is also shunned by most Muslim and Arab countries such as Egypt with whom they share border (people think that “siege of Gaza” implies they had no other borders. 1:0 Propaganda vs geography).
There was no military objective to what we saw in Israel. Does anyone believed that Hammas planned to kill 10 million Israelis with a crew of a few hundred people on bikes and Toyota pickup trucks? They know better. The only plan was to murder, r**e, and kidnap Jewish civilians whilst believing that should they die, they will become martyrs, celebrated by their own widows and orphans. They came to slit throats of babies, r**e children, behead grandmothers, burn alive families in their homes, massacre hundreds of young people at a music festival, and broadcast all of this cheerfully.
They did not come to fight soldiers.
They did not come to take a territory.
Don’t get it twisted.
These are not progressive values of religious freedom, tolerance, self expression, acceptance, love, social justice, and peace. If you think you are promoting these values by cheering this on you need to get your head checked. And if you think that a dead Palestinian baby is outrageous and dead Jewish baby is fair game, you are in fact a bigoted antisemite, not a progressive, not a liberal, not a conservative.
Please share this message and use these talking points when responding to others. I wish both Jews and Palestinians safety, peace, and quiet.

Yep, it’s Treehug! Our World Cheese Awards 2022-2023 Bronze winner is back for another cold season! This year with a little improvement that will go a long way and leave an ooey gooey lasting impression!
This washed rind is made in the cooler seasons only, when milk fat and proteins are at their highest and you really crave something melty and uber-festive. As its name suggests, it is hugged by a tree (not the other way around people!), as it is encased in straps of spruce bark that helps it ripen to a lovely spoonable goo and deliver tannins to the cheese, giving it a forest floor aroma outside and resiny piney wintery notes inside.
Treehug can be baked into and instant as it keeps together in the oven in its spruce bark straps.
The first wheels are aging right now for the upcoming holiday season! Release date will be announced in a couple of weeks. We can’t wait for you to try them.

On this eve of Yom Kippur, the holiest of the Jewish holidays, a day of atonement, reflection, resolutions on becoming a better person and on social good. For many, this means fasting as well. We want to wish Jews around the world to be written positively in the book of life and to have a thoughtful reflection.
Why a schmear photo?
It has been a time-honored tradition here in North America to break the fast with bagels and schmear. Even if you were not lucky enough to get our schmear, we wish you joy in whatever you eat to break fast.
Why this song? (Speakers on)
Avinu Malkeinu is sang in holiday services while asking for forgiveness and grace. It is one of the only Jewish songs with its music unchanged from Hebrew to other languages and with non-Hebrew speakers actually knowing the lyrics. It’s a great equalizer of people who are otherwise known to have two people@on one room with 3 differing opinions. The song’s togetherness is contagious.

Sometimes a batch of has a surprise for you. Take in on board and make a one-off.
Here we go! Third quarter is upon us, peeps are back in town, and we are cranking away that cheese! Or as Earth Wind & Fire sings it: 🎶𝑫𝒂𝒏𝒄𝒊𝒏’ 𝒊𝒏 𝑺𝒆𝒑𝒕𝒆𝒎𝒃𝒆𝒓♬
These are two batches of sharing a single rack in our aging cellar. We practice this solara-type of rotation to land balanced microflora from old cheese into the newer stuff. There’s only 9 days in between these two batches and clearly you spot the difference. Some@of the ugly lopsided ones won’t make it to stores but for now they help raise their young siblings.
Moonrise is made with local grassfed milk. It’s coagulated with a unique blend of French calf rennet and vegetarian Iberian thistle flower before being and repeatedly washed in cultured brine to create a harmonious silky texture and peanut-like finish. Find it at markets, , , to name a few, as well as some of the best restaurants and finest cheese shops in the country.
A is born.
Just molded curd of moonrise will await overnight while its whey is draining, compacting it to a cheeee puck about 1/3 the height pictured here. Next it gets un-molded and rubbed in dry salt before it heads into a yeasting chamber that kickstarts that beautiful rind. After 35 days in the cheese cave, , , and color have been matured from the outside-inwards towards the center core of the cheese, and Moonrise is delivered to your favorite , , and for you to enjoy!
