We had a fantastic day at the Philabundance Community Kitchen hosting a Community Cook-In with UPMC! Our own Chef Kai Reynolds and Nutrition Educator, Julia, wowed over 80 guests with a live cooking demonstration featuring a healthy, delicious meal. A heartfelt thank you to State Rep. Darisha Parker and all our amazing partners—Congreso de Latinos Unidos, Impact Services, Pennsylvania Assistive Technology Foundation PATF, SeniorLAW Center, PA CareerLink Philadelphia, Community Behavioral Health, MANNA (Metropolitan Area Neighborhood Nutrition Alliance), ACME Markets, and the Philadelphia Corporation for Aging. Your collaboration made this event truly special! Check out the recipe below! Baked Cajun Salmon Cakes .......................................................... 1 16oz can wild salmon 3 eggs3 TBSP mayo 1 bell pepper, finely chopped 1 onion, finely chopped 3 ½ TSP Cajun seasoning 1 cup Panko Salt and Pepper 1 Lemon, cut into wedges 1. Preheat oven to 375° 2. Combine salmon, eggs, mayo,chopped bell pepper and onion,Cajun seasoning, Panko and salt andpepper in a large bowl. 3. Using a 2 oz scoop, gently forminto 12 patties and place on a lightlygreased baking sheet. 4. Bake for 10 minutes at 375° 5. Broil for last 5-7 minutes or untilgolden brown. 6. Serve with a squeeze of lemon Creamy Spinach Pasta ................................................................... 2 qts water 1 box whole wheat penne pasta 1 bag baby spinach 3 TBSP butter 3/4 cup all-purpose flour 2.5 cups whole milk 2 cups grated Parmesan cheese ½ TSP salt 1 TBSP granulated garlic 1. In a saucepot, bring 2 qts of water to a boil. Add 1 tbsp salt and pasta. Cook for 6-8 minutes or until pasta is al dente. 2. Before straining, add spinach to boiling water. Strain pasta and spinach and cool slightly. 3. Place a large saucepot over medium/high heat. Add butter. When melted add flour. Whisk until butter and flour form a crumble or paste. 4. Add milk to the paste while whisking over

Excited to cook with us? Come join PCK Executive Chef Khai and Nutrition Educator Julia as they guide you through creating a delicious Salsa Chicken! Salsa Chicken: 6 boneless chicken breasts, 2 TBSP taco seasoning, ½ TBSP oil, 2 cups salsa, 1.5 cups shredded cheddar cheese, ½ cup sour cream (for serving), 3 TBSP sliced green onion (for serving) 1. Preheat oven to 375°. Coat a 2-3 qt baking dish with oil or cooking spray. 2. Season chicken breast using ½ tbsp oil and 2 tbsp taco seasoning. 3. Spread ½ cup salsa in an even layer in the bottom of the dish. Lay chicken breast on top of salsa. Pour the remaining salsa evenly over the chicken. 4. Bake for 30-35 minutes, or until chicken has reached an internal temp of 165° 5. Remove from oven. Sprinkle shredded cheddar cheese over chicken. 6. Return pan to oven and bake for an additional 2-3 minutes or until cheese melts 7. Top each chicken breast with a dollop of sour cream and a sprinkling of green onions. Serve with rice and broccoli. Spanish Rice: 2 TBSP oil, ½ white onion, diced, 2 cups white rice, 1 ½ TBSP tomato paste, 2 garlic cloves, minced, ¾ cup diced fresh tomatoes, 1 jalapeno pepper, seeded and chopped, ½ TSP cumin, ½ TSP sea salt, ¼ TSP dried oregano, 3 cups vegetable broth 1. Heat oil in a medium pot. Add onion and cook 5-8 minutes. Add minced garlic, stir 1 min. Last, add rice and cook for 2 minutes, or until fragrant and toasted. 2. Stir in tomato paste, add the fresh tomatoes, jalapeño, cumin, salt, oregano, and broth. Bring to a boil. Cover, reduce heat, simmer for 15 minutes 3. Remove from the heat and let sit, covered, for 10 more minutes. Fluff with a fork. Roasted Broccoli: 2 heads broccoli, 2 TBSP oil, 1 TSP garlic powder, 1 TSP salt 1. Preheat Oven to 350° 2. Cut heads of broccoli into florets. Toss with oil, salt and garlic powder 3. Spread evenly on a sheet tray and bake for 8-12 minutes or until broccoli is cooked 4. Remove from oven and serve with Salsa Chicken and Spani

In recognition of National Avocado Day, we teamed up with Avocados From Mexico and GIANT for our 4th annual Top Guac competition at the Philabundance Community Kitchen (PCK)! 🥑 In just 15 minutes, contestants went 'pit to pit' to earn the title of best guacamole recipe, and get this - in addition, the GIANT company and Avocados from Mexico donated nearly 60,000 fresh avocados to us to distribute to the communities we serve! Recently, we wrapped up an unforgettable moment at City Hall with PHLCouncil celebrating our 40 years of fighting hunger! 🎉 40 years ago, our founder, Pamela Rainey Lawler, started a food rescue organization from her Subaru station wagon. Today, we serve nine counties with 350+ partners, providing nutritious, culturally responsive, equitably sourced, and accessible food.
