Here’s a fun panettone fact as we count down to Panettone Weekend, Nov. 2-3! Authentic panettone is made with a stiff sourdough called pasta madre or lievito madre. The lievito madre has a soft and round flavor profile that helps us develop the true flavor and aroma of panettone!
