🐛 party part 1: This 4' long 3D caterpillar cake was definitely my most ambitious undertaking. I'll tell ya, there's a reason why several other bakeries turned down this order request. But I took on the challenge and I'm so glad that I did! I loved seeing this children's book character come to life through my cake design. These edible tennis balls are a perfect serve! Inside these fuzzy demisphere desserts is a cherry chocolate mousse and chocolate cookie crumble. To make the fuzzy texture of the neon nap, I mixed gel food coloring, granulated sugar and powdered sugar. Dehydrated the mixture then put it through the food processor. Et Viola, edible fuzz. 🎾 (Psst: this desert shot me through the food network auditions)

Them: “ Can you make a cookie that sort of looks like a diploma?”
Me: “ Darlin’ I can make the cookie an exact replica and even put it in a wood frame.”

If I say I’m bringing a carrot cake to Easter supper you better believe I am bringing a CARROT cake! And since I will not be out done, I like my carrot cake to be bountiful. Chunky. Thicc. Full of course grated carrots, golden raisins, walnuts, pineapple, citrus zest and a taaaangy cream cheese icing. Served with love and caramel.
