“Picazzo’s Healthy Italian Kitchen (five Valley locations, picazzos.com) goes the savory route, serving a generous portion of whipped herb ricotta ($14, pictured) as a starter with a pile of toasted, gluten-free focaccia slices. The cooks whip whole milk ricotta by hand to achieve a light and fluffy texture and then add chopped parsley and chives, salt, cracked black pepper, red pepper flakes and garlic to jazz it up. The result is a buttery, velvety spread that tastes deceivingly rich considering ricotta is one of the healthier cheese choices. Picazzo’s recently added the starter as part of an effort to include more Mediterranean-inspired dishes on the menu. “It’s a refreshing cold appetizer, especially in the summer,” says managing partner Chris Disney. “There’s so much flavor in such a simple dish.””
